Can't eat another potato! Need ideas :)

I swear, H and I eat potatoes every night with dinner....whether it be potato wedges, slices, grilled, baked....etc... and I can't do it anymore!!! lol

 H hates rice (which makes me sad since its my favorite) and I don't really want to eat pasta...too many carbs.

I literally would rather eat nothing if my only option is potatoes, but H "needs" a side with his food. Sooo anyone have any ideas for my super picky H?

  • Me and the hubby do this alot with dinner:

    I LOVE greenbeans and he LOVES carrots. So I get a can of green beans and a can of sliced carrots and mix the two in a pot, add some butter, salt, pepper, and garlic powder and thats it for a veggie side! :)

     I like a lot of seasoning in my food so I probably put more than the average person would put but i dont care its so good.

  • My current favorite is corn on the cob!  H wraps it in foil and cooks it on the grill.  We add a little butter,salt and pepper to it afterwords!  It's pretty simple, but very yummy!

     I know you're trying to avoid potatoes, but one of my favorite sides is New Potatoes.  H chops them, adds seasoning to it, and cooks it in olive oil on the stove.

     The person that had my current job before me is Australian.  My current co-worker (she worked with the previous employee.. now works with me) tells me that this girl talked about how she didn't understand why all Americans insisted on having a potato with every meal.. like Americans didn't consider it a meal unless it had a potato!

  • does your hubby like veggies of any kind?  my DH was never big into anything green except asparagus, which was weird... haha  so we used to do sauteed asparagus a lot until i convinced him to try other stuff.

    some of our favorite sides:

    • sauteed asparagus in butter, salt & pepper
    • same thing with fresh green beans
    • shredded cabbage (usually mixed in a stir fry)
    • caprese salad (cherry tomatoes, fresh basil, and those little fresh mozzarella balls sprinkled with salt, pepper, evoo & maybe some balsamic vinegar if i'm in the mood... omg yum!)
    • lightly steamed carrots (he likes them raw, i only like them cooked, so they're usually about half cooked and we'll both eat them  haha)
    • sauteed zucchini slices in olive oil, salt and pepper (SO AWESOME with fresh zucchini or any summer squash out of the garden) not too much saute though, you don't want them all limp and gross
    • DH has made this really great salad with fresh spring mix and lots of fresh fruit (like blue berries, raspberries, orange slices, sliced apples, etc), sunflower seeds and a raspberry walnut vinagerette, it's great!

    There's a bunch more i can't think of now, but we (read: I) usually try to stick with fresh veggies as sides and don't often have pasta, rice or potatoes (except roasted garlic mashed potatoes, and macaroni & cheese... they're my weakness...)

    i hope that helps a little.  i'll see if i can find some links to some other things that look good.

    H is big on having a meat, starch and veggie as his meal, so I couldn't just do meat and a veg. for every meal, I don't know if yours is the same way.

     My H is the same way...only his idea of a veggie is corn...maybe green beans but only if they are the "squishy ones from the can" he won't eat fresh ones lol

     I don't think he'd do those other grains, he's a true meat and potatoes kind of guy.

    I guess I'll just have to continue to make them, and then make something else for myself.

    Are there any simple pasta sides that people are making? I'd do a smaller portion for myself so its not too many carbs, if it means I can stop eating potatoes, even if its just once a week!

  • I second quinoa- Full of protein and crazy easy to make and dress up. I make mine in the microwave and it couldn't be faster to do.

    What about beans? They'd have a similar potato texture, but would be a way healthier option. Lots of bean salad recipes out there :)

  • We do mac and cheese a lot sometimes but H likes all kinds of veggies and I don't I just like potatos mostly. Try stuff like mixing veggies as one of the ladies said. Also try rice with stuff mixed in so that he may actually eat it since it has other flavors.

    Another Smoke and mirrors potato trick:  Mashed cauliflower.  I have a recipe book for cooking for your family (i.e. kids), and the kids think their eating mashed potatoes, but they are really getting their veggies!! Maybe trick your hubby? lol
