I'm doing freelance work all weekend, so I'm stuck in front of a computer...however, it has gotten me to meal plan! This week, I'm focused on eating healthier, more "whole" foods because I was really bad last week with wings, pizza, etc.
Sunday: Sesame scallops, roasted asparagus, mashed potato/cauliflower blend (I got a great deal on jumbo scallops for 50 percent off yesterday at Safeway! So it was a big container for $10.)
Monday: Grilled steak, roasted broccoli
Tuesday: Friend's house for holiday celebration
Wednesday: Indian-spiced, yogurt-marinated grilled chicken; tomato-mushroom-zucchini saute
Thursday: Slow-cooker chicken masala (I guess I'm on an Indian chicken kick this week!), veggie TBD depending on what I find at the grocery store today.
Friday: Either pork chops or out at a friend's house

I'm making my meal plan tonight and I'll edit and add it later but omg, I am making scallops (assuming I can get a good price). That sounds delish!

Monday: Grilled scallops with lemon butter sauce, garlic mashed potatoes and broccoli
Tuesday: Honey glazed salmon, brown rice and zuch/squash medley.
Wednesday: Crockpot salsa chicken (this keeps getting bounced each week)
Thursday: Balsamic butter penne
Friday: Pizza night
Saturday: Date night
Sunday: Raviolis, fried tomatoes and salad
Someone's getting a little brother!
We bought a CSA share at a silent auction. It was supposed to be for 5 weeks, but has been extended through the summer. I have been overwhelmed by the abundance, so this week I tried to plan ahead.
Saturday-- hamburgers and a salad.
Sunday-- Edible radish, carrot, beet top greens salad with a beet and feta pizza. The salad was surprisingly amazing, so I am including the link.

Monday-- Swiss chard and bacon pasta
Tuesday-- fennel tart and a salad
Wednesday-- going to a party
Thursday-- carrot top and quinoa soup
Friday-- stuffed patty pan squash and a salad
Saturday-- beet green pasta
(1 bunch of carrots, 3 bunches of beets, 2 bunches of radishes, 3 complete fennel stalks and bulbs, 1 bag of arugula, 2 heads of romaine, 3 heads of Boston lettuce, and 1 bunch Swiss chard were included in our box. All the root vegetables had their greens still attached).
Monday- baked spaghetti
Tuesday- leftover spaghetti
Wednesday- burgers on the grill
Thursday- gnocchi with summer vegetables
Friday- pizza and wings (it's one of the combo meals that come in the freezer section)
Saturday- ham slices, broccoli, some sort of potato
Sunday: BBQ pulled chicken and corn on the cob.
Monday: Sweet Italian Sausage and grilled squash
Wednesday: We are having family over for a cookout. It was a last minute plans, so I'm sure we will do chicken on the grill and potato salad.
Thursday: Burgers and veggies on the grill.
Friday: Not sure yet...
Saturday: Not Sure yet...
My meal plan is sparse this week. I am struggling to think of summery meals where I don't have to use the oven. Help???
Sunday: White cheddar garlic chicken with penne (I had planned this, but then didn't want to run the oven for roasting garlic so we scrapped it and got Subway).
Monday: Chicken, brocolli and orzo
Tuesday: ?? (Skipping Monday's meal threw me off)
Wednesday: Cookout at ILs
Thursday: Take out since DH will be out
Friday: Pork BBQ, tater tots, green beans

I like to use my toaster oven for small jobs like this one. It is great for avoiding the heat.
Ugh I don't know why I didn't think of this!! I used the toaster oven last week to avoid the regular oven. Okay, now I can put this back on the menu - thanks!!
