I'm making baked potatoes, grilled chicken, and a big green salad with hard boiled eggs, ranch, and tomatoes. I'm starving! I made pasta salad earlier and I've been eating that and no bake cookies all day. Yum.

We are going OUT for dinner and drinks for my birthday and the boys are sleeping at my mom's tonight.
Boom! No one can beat those dinner plans!

Tonight I'm making soft tacos with Spanish rice. Also on the menu this week: BBQ brisket sandwiches and baked potatoes; beef/pepperoni Stromboli with salad; sweet and spicy bacon chicken (can't think of the real name) with a veggie and maybe pasta side and that's as far as I've gotten with the meal planning
It was! Better than I expected and really easy
Here's what I did:
Mixed about 1/4 cup Greek yogurt with the juice of half a lemon, some parsley and chives, salt, pepper, and garlic.
Roasted two chicken breasts (grilled would be great...I didn't feel like it and I roasted them in the toaster oven to keep the house cool lol) with olive oil, salt, pepper, garlic, onion and thyme.
Toasted the pita.
Put all of the ingredients in the pita! Make sure you use plenty of the sauce. I also put a little sweet onion in there, and we had pickles on the side along with the sweet potato fries.
We had sandwiches last night. I got home late.
Not sure about tonight. Probably salad with baked chicken rolled in bread crumbs and parmesan cheese.
