Off to a pig roast this weekend and need to bring apps

Any ideas would be great.  So far I am making cream cheese stuffed olives with dressing.

  • i love simple platters of spreads and crackers or tortilla chips - get a variety pack of fancy crackers, a flavored hummus, maybe a babaganosh, a peach/mango salsa or corn/black bean salsa - i think those would hold up well outside in the heat (instead of cheese)

    skewers of fresh cut up fruit

    skewers of cherry tomatoes and fresh mozz and fresh basil, drizzle with balsamic vinegar and a bit of olive oil

    we've made this and it's super easy and yummy: http://annies-eats.com/2010/02/01/pizza-bites/    you could totally change up the flavors too - like use chicken and pineapple, or meatballs or some just cheese

  • I dont know if its an "appetizer" per se, but what about a spinach salad with cut strawberries, blueberies and walnuts? mixed w a light dressing...

    we have that at pot lucks at work often. yum

  • We like dips. We do bousin cheese dip with crackers and we make or buy a 7 layer dip! That always goes over SO well at our parties! We usually make or buy 2 of them! You could also do wings as they can be served cold. Bruchetta would be good for hot weather. We also do a salad with cranberries and walnuts in a vinagrette.
