what's for dinner - weekend edition!

since it's pretty slow on here during the weekend, i figured we could use this thread for tonight's dinner as well as any weekend dinner plans you have. :)

tonight hubby's coming to visit and i've planned a special date night dinner.

i'm doing a spinach salad with chopped apples, tomatoes, boiled egg, goat cheese and bacon vinaigrette ( vinaigrette recipe here )

then i'm making pan seared filets with a balsamic/red wine reduction on the side.  not sure about sides yet, maybe some roasted garlic mashed potatoes or mac & cheese.

breakfast in the morning is homemade oatmeal (not the instant kind) with homemade honey butter ( super simple recipe ), brown sugar, homemade granola (alton brown recipe) and fresh fruit.

i can't wait! :)

  • Gah, your salad sounds SO good.

    - Tonight: Not sure. Probably salad of some nature.

    - Tomorrow: We have a Groupon for a fancy-ish restaurant that expires soon, so we're using it tomorrow night. They have this tomato tart with basil ice cream on the starter menu that I am DYING to try :)

    - Sunday: Probably grilled cubano hot dogs (dogs dressed up with swiss cheese, pickles, and mustard). Discovered the grocery store has fresh baked hot dog buns in the bakery, and we're kind of addicted to them :)

    Tonight we're having a taco chicken bowl over rice. I think tomorrow I'm planning on a crock pot bolognese and I forget what's on the menu for Sunday.

  • Wow... you guys all make me feel like a lame cook! haha we eat pretty "ordinary" things I guess..

    Tonight... it's either burger's out at the lake.. H is building a cabin for a guy, and apparently we might be doing BBQ out there with everyone, and if not it's date night going out supper for us.

     Tomorrow will probably be date night if we don't do it tonight... and that will be going to our favorite place in town.. which actually happens to be the local bar, but they have DELICIOUS food, and they are the ones that catered our wedding.

    Sunday... i'm not sure.. i'm thinking Steaks and Potatoes. just need to buy some of each... haha

  • Tonight will either be something quick I can fix OR H will just pick up something. And for breakfast in the morning we are doing french toast with cinnamon.

    Saturday dinner: thinking about making either meatloaf for the first time or manicotti (H's favorite) and which ever one I don't make then I will be making on Sunday night.

  • Boy, my menu is lame compared to all these yummy ones that you ladies are posting.

     Hubby is sick as a dog with horrible strep throat, so I don't think I'm even going to do anything for supper tonight as he is currently passed out on the sofa dead asleep.  Besides it's too freaking hot out.

    I'm working 630a-330p tomorrow and then going back in for an 11p-7a so we'll prob just get pizza or something on the way home as I have to eat, nap, shower and go right back to work.  

    Sunday we always have dinner at his mothers so it's always a crap shoot as to what she'll serve.  It's always 3 things in rotation, roast chicken, meatloaf or stuffed peppers.  Personally I'm hoping for stuffed peppers this week.

  • Ahhh, we made Cassoulet! white kidney beans, baked beans, fresh sausage and bacon (FIL is a butcher), garlic and onion, and some tomato sauce and spices, right in the crock pot! EASY AND DELICIOUS!
