If you've done a similar vaca...
We're planning 2 nights at the GC and SV and 3 in Vegas in SV...this would translate to approx 1.5 days in GC and SV and 2.5 in Vegas due to travel time. We lose nearly 10 hours for travel on the first and last day and about 4 hours of drive time on two additional days. We'd be flying into Flagstaff and departing from Burbank to keep things as convenient as possible. Also, from what I can find, it seems the weather is all over the place in late Oct/early Nov...has anyone been in these areas during this time of year?
Does this give us enough time to see the GC, play the tables and catch a show in Vegas, daytrip to Hoover Dam before moving on to SV? TIA!

Somehow I got lost on your timeframe... Anyway, this is what we did: Flew into Vegas and drove from there to the GC, spent 1 night/1 day there, which was more than enough time to see what we wanted, unless you plan on hiking down into it..? Then we drove over to Flagstaff for a night (nothing there, lol), and from there over to Sedona (highly rec going there) where we spent 2 nights, then back to Vegas and spent 3 nights there. Honestly, you only need a couple hours to see the Hoover Dam, it's worth seeing but no need to spend a whole day there. I know nothing about the Simi Valley.
Oh and we did this in the middle of summer, which I don't rec to anyone, it was HOTTT! lol. So you should be good in Oct/Nov.

I lived in Flagstaff for a while - in Oct/Nov, you're generally looking at highs in the mid-50s with lows in the 20s/30s, and it's usually 5-10 degrees colder at the Canyon.
There is freakish weather where it'll get into the 70's, but it could also snow like no other. 1st snow *generally* doesn't happen before Halloween, but there's been a couple years where the ski lift has been opened on Thanksgiving, so the potential is there to get A LOT of snow.
Las Vegas will probably be in the 70s. No rain (typical).
My advice - layer, layer, layer.
Don't take a big jacket for AZ + tees for LV. Take camis, tees, long sleeved shirts, and a sweat shirt plus a windbreaker/light jacket. It'll keep you warmer in Flag than a big jacket, and you can pare down accordingly as you start walking around and warming up.
