We are heading to a BBQ this weekend and we have been asked to bring a dish. I need something that will travels well (2 plus hour drive). I have a crock pot, so I could transport if need be.
Usually I like to do pasta and just throw lots of veggies, pepperoni, etc w/salad dressing, etc. But I was hoping to come up with some more exciting.
Recommendations are welcome!

I just made a tomato/cucumer salad last night. It was delish and there's no mayo or anything so it would travel well. It's better the longer it sits and marinates anyway. Let me know if you want me to send you the 'recipe' - I use that loosely because I typically make it up everytime I make it.

I made it for DH and I and we had a little left over - so you'll have to adjust everything for the amount of people at the BBQ.
4 on the vine tomatoes
1 bunch of scallions
1 med/large cucumber (seeded)
3/4 can of chickpeas (if you don't like these, feel free to omit)
1/2 small container of feta cheese (I've also used goat cheese just to change it up)
olive oil
red wine vinegar
salt/pepper (to taste)
cilantro and lime juice (only because I love it)
(I've also used avocado in this - if I have one - delish)
- cut tomatoes and cucumber into similar size pieces
- chop scallions
- add everything to one bowl
- add oil and vinegar slowly and taste as you go along to make sure you haven't over done it (same with salt and pepper)
- stir and let sit so everything can marinate - better room temperature than ice cold out of the fridge (in my opinion)
what about a black bean and corn salad?
I don't have a recipe, but there a million online.
If you want something fast, healthy, and delicious this is what I bring:
Tomato Black Bean Salad (dice 3 tomatoes, mix with a can of black beans, add 1 tsp salt, juice of half a lime. You can add chopped cilantro if you like it, too).
