  • Ugh, me too. We finally have a kitchen back, but because we didn't cook for so long I have no motivation.

    But we did make marinated steak tips a week or so ago, and the marinade was delicious, and so simple. I'm pretty sure it was this one:

  • I've got class three nights a week this month, and Brett is doing Phase I of South Beach Diet, so our meals have been a little strange.  The past week I've made/will be making:

  • Ok, I've got it now:

    Mon - Chicken Pot Stickers
    Tues - Garlic & Lemon Chicken w/ Red Potatoes and Green Beans
    Wed - Chicken Parm Burgers, Spinach Salad, Oven Fries
    Thurs - Grilled Steak, Hibachi Noodles
    Fri - Jack Chicken Nuggets, Oven Fries, Veggies & Dip

  • Tonight: Beer Can Chicken on the BBQ (dont really have a recipe... just doing a poultry rub on the bird all day and then I stand the bird up on a can of beer (that is three fourths full - Jacob will have to drink a fourth of it so it doesnt overflow hehe). It is soooo good and soooo tender. I totally hate beer but it just gets it moist and flavorful. Im going to peruse what is in the kitchen for a side but I think Ill do bbq corn and grilled zucchini with it. HA!! This post is helping me to finalize it, hehe. :)

    Tomorrow:
    Lunch: Leftover chicken, hummus and zucchini on wheat pita. (I know it isnt a lunch post but Im excited about my hummus and wheat pita, hehe)
    Dinner: Steak, either baked or roasted potatoes and some green veggie... maybe more zucchini if there is any left or I might throw together a salad. Im also going to attempt a banana bread with whole wheat flower for a healthier version.

    Wed: Leftover chicken... maybe with a baked potato and of course my rule is having a green veggie with every meal so we shall see on that.

    Thur: My mom is going to come back into town so not sure what we will be doing... depends on her time frame. This might be a light day at work for Jacob so we might bake some homemade bread (YES, he bakes!!!)... Im hoping we can do some sort of cracked wheat bread.

    Fri: Mom will be in town so we are having a bbq with her, my besties and my sis. With a large group and warm weather, we are thinking about doing a kabob bar (Make your own kabobs and then grill them) though with my little nieces there and my other friend's little girl... we might also throw a few simple burgers on the grill in addition. :)

    Sat-Sun: TBD... My best friend's baby shower during the day on Saturday... maybe a light dinner or out somewhere. We usually go out for a nice lunch Sundays after church and then do a light dinner... I love Sundays! :)

    HA!!! I totally wrote 'flour' wrong, hehe. Brain fart for this grammar nazi teacher... maybe I'm thinking about actual flowers a lot, hehe. :)

  • My "wonderful" husband brought home a 5lb bag of cornbread mix they were giving away at work. Open to any ideas on how to use this "gift."

     Still trying to make and freeze as much as possible.

    Last night:
    Corndog muffins -- I managed to freeze about 20 mini muffins

    Tonight: World's Best Chicken

    This week:

    Sweet and Sour Crockpot Chicken (This is a recipe from a friend, I'll post it at the end.)
    Lasagna Roll Ups
    Cheesy Stuffed Shells
    Cheesy Cornbread Casserole

    Sweet and Sour Crockpot Chicken

    Chicken breast
    Half cup of ketchup
    Half cup of soy sauce
    1/4 cup of runny honey
    1/4 cup balsamic vinegar
    Garlic
    Herbs of choice
    Put in slow cooker on low for 8 hours.

  • I'm impressed with those of you who are willing to cook inside/use your oven in the summer!! We don't have central air so turning on the oven is the last thing I want to do when it's hot out. It's 80 degrees in here right now, and that's with the portable air conditioner on... the grill is my friend in the summer! LOL

    Youd love beer can chicken then... something different than burgers and steak... goes on the grill for an hour to an hour and fifteen... super good. Im getting that way about the oven too but since it is so hot at Jacobs (he lives an hour inland from me), ac is absolutely necessary. At my house, it is hardly over 80 outside so it stays cool.

  • Crystal, I have a bunch of chilli frozen, but was planning on making some cornbread for the freezer to go with it. I think it might make sense to make another batch of chilli as well. Thanks!

    Alissa, I adapt as much as I can for the crock pot in summer to keep the house cool.

  • I really should use the crockpot more often at this time of year, I don't think of it in the summer but it makes perfect sense to use then!

  • I don't think to use the crock pot in the summer either.  I associate it with more hearty meals that are good for winter time.  I should start using it though.
