Is there a crazy zucchini boom happening? So many people are posting about the over abundance and my FIL has been giving it to us every week because he has so much in his garden!
Last night I just diced it up along with an onion and some fresh garlic, tossed in olive oil and Essence seasoning and put on a baking sheet, baked about 20 minutes on 350, easy and good!

Kel - this is almost always how I make mine...but I never thought to cook it in the oven! I always saute on the stovetop. I'll have to try it that way once it cools off enough to use my oven again
