  • I've sucked the last couple of weeks - so I am really trying this week

    Sunday - we had Maryland Crab soup w/ biscuits

    Monday - Chicken Satay w/ rice (it was super yummy and pretty easy) and cucumber salad

    Tuesday - TBD - prob leftovers

    Wednesday - Goddess Chicken Salad - http://www.poorgirleatswell.com/2009/06/recipe-goddess-chicken-salad.html we don't normally eat salad for meals, but we'll see how this goes.

    Thursday - DH is at a late meeting, so its probably a Chik Fila or Wegman's night for me and DD.

    Friday - Weight Watchers Eggplant Parmesan - I'm pretty stoked to try this.

  • Sunday- We had leftover from Wegman's mac and cheese and some chicken lo-mein.

    Monday- Burgers on the grill, grilled zucchini and watermelon.

    Tuesday- Fish sticks and potato fries.

    Wednesday- Either grilled cheese sandwich and rice or some sausages/veggies.

    Thursday- Old Bay drumsticks in the crock pot and a zucchini fritters.

    Friday- IDK

    Saturday- IDK

  • We haven't been in to cooking much this week. We've been eating a hodge podge of party leftovers and last night I got a salad from McDonalds. I'm not sure what we're doing tonight or for the rest of the week yet.
  • I have fallen off the meal planning wagon lately. I need to haul my behind back on. Its just been so hot, and nothing seems appetizing.

    After reading the comments, I just bought light spaghetti sauce to use (instead of just plain tomato sauce) and I'll probably use a little more cheese than in the recipe.

    Thanks! I picked up eggplant this week and I really need to use them and not let them die a slow death in the fridge.

  • I made a dish w/ eggplant before that was basically pan-frying cubed eggplant w/ some garlic and olive oil, then add a big can of crushed tomatoes simmer for a little while and then serve w/ cubed fresh mozzarella and penne or rotini.

  • Sunday - Mac n' Cheese & broccoli

    Monday - Salmon burgers with fries and broccoli

    Tuesday - Bean burritos (kidney beans, pinto beans, green peppers, fresh tomatoes, rice)

    Wednesday - Grilled tilapia with grilled zucchini, or if we get home too late, baked tilapia. However, I HATE to use the oven when it's this hot out.

    Thursday - ? 

    Friday - IDK
