so, the friday thread made me think to start this one!
hubby's coming into town and i've been trying out this awesome recipe lately that i want to do for him tonight:
lemon marinated chicken with an oatmeal/almond/flax crust. it's SO easy and really good!
i usually slice my chicken breast length-wise, so i have two thin pieces of breast (or you could pound it out instead to make it thinner) then marinate in lemon juice, salt, pepper and a spash of olive oil for about 30 minutes. the lemon really penetrates the chicken so you don't need a ton of time in the marinade.
while the chicken is doing it's thing i'll run some rolled oats, sliced almonds and ground flax seed through the food processor until it's fine like bread crumbs. take the chicken straight from the marinade and press into the crumb mixture, then bake at 350F for 30 minutes or until it's cooked through.
while the chicken is baking heat up the marinade on the stove top (you have to let it simmer for AT LEAST 20 minutes since you marinated raw chicken in it) i'll add some butter while it's simmering and some cream/milk at the end for a lemon cream sauce to put on top of the chicken. it's SO good!! you could probably do this with any kind of nuts/seeds.
Re: what's for dinner? - weekend edition!
It's unseasonally chilly in New England today so I'm making one of H's favorite recipes that I usually make in the fall. It's apple pie filling, pork chops, and stuffing, layered and baked. But today I'm trying it in the crock pot! I added a little apple juice to help keep the pork chops moist and didn't add the stuffing, I'll just make that seperately. Then next time I think I'm going to try chunky apple sauce with added seasoning instead of pie filling to make it a little healthier.
I know we're going out with H's Aunt, Sister and future cousin-in-law tomorrow so I'm not planning anything and we have plenty of leftovers if we need them!

I just ate hot dogs for lunch.... lol and I have no ideawhat's up for the rest of the weekend. H is working tomorrow and probably sunday....and i'll be lucky if he makes it home sober tonight... so i think i'll be on my own for supper tonight too. Now before you get the wrong impression about H... lol he's working on a cabin at a near by lake.. they're standing some walls for it... then apparently the guy they're working for will be out there.. so they'll have some after work beers... and by some.. i mean.. i'll porbably have to drive out there and pick him and his business partner up.. lol i'm such a nice wife
Tomorow night I think we'll go out to our favorite local place... haven't been for a while.. and sunday .. well that's just too far ahead to thnk about!

I have no clue what we're eating tonight or this weekend. We have a Groupon for H Burger that we'll probably use at some point... And if it gets cool enough, I'll make us breakfast skillets (fried potatoes, peppers, & onions, topped with scrambled eggs, cheddar, and cilantro)- But otherwise, I think everything is going to be on the fly
