Sunday- just picked up some sliced roast beef and pre made potato salad from a deli at the shore, needed quick and easy
Monday- sushi girl's night
Tuesday- baked chicken leg quarters, asparagus, brown rice
Wednesday- london broil, escarole and beans, and yams
Thursday- linguini with clams, salad
Friday-Saturday- hoping for crabs one night, pizza another

Sunday we went to the Movie Tavern to see Batman and ate dinner there. Such a great idea!
Last night I made a big batch of oven-fried eggplant. We had some of it as eggplant parm with pasta and I froze the rest for later.
Tonight DH has his golf league and a hockey game, so I'm on my own. Probably a panini of leftover pasta.
Weds - maybe salmon on the grill, leftover potatoes and a veg.
Thurs/Fri - who knows. DH wants to have a date night so we'll go out one of the nights.
sa- leftover crab and corn chowder (freezer) with biscuits
su- pork with bbq plum sauce (I canned the extra sauce and it worked!!!!)
m- southwestern salmon, cous cous, corn/black bean/peach/roasted pepper/tomato salad (or salsa, whichever you would like to call it)
tu- roasted chicken, new poatatoes, green beans
w- taco night with the leftover salsa/salad from m
th- leftover ham and bean soup (freezer) with bread or biscuits
f- English pub food iho the Olympic Opening Ceremony
The Dude made a beer can chicken on Saturday so we have lots of left overs.
Sunday - home made pizza with said chicken.
Monday - I had left over tortellini soup, DH had pasta and left over chicken
Tonight - taco salad
Tomorrow - my sister in law is making me dinner. No clue what it'll be.
Thats as far as I've gotten.

Mon - pasta and sausage with marinara, heirloom tomato & mozzarella salad
Tues - beef chili
Wed - grilled chicken salads
Thurs - coconut curry chicken, quinoa or brown rice
Fri - probably out
I never respond to this because I never meal plan but I think I'd like to change that... So far this week I've had:
Sunday - Caesar Salad and Kosher Hot Dogs
Monday - Beet and Goat Cheese Salad Topped with Chicken
Tuesday - Pork Chops on the grill with a sweet potato, apple sauce and grilled squash.
Tonight I'm going out to eat with a friend. For the rest of the week I have Lobster Ravioli, probably with a side Caesar Salad; fixings for a strawberry, walnut, goat cheese salad, and fixings for a caprese salad, though I may make that as a pasta. I also have a container of mushrooms that need to be used soon so I'm thinking I'll make a quiche. Does anyone have any good mushroom quiche recipes? Preferably on the healthy side and not made with cream and tons of cheese.

Monday, grilled chicken burgers (never had these before, so good. ground chicken, I tried to grate an onion, didn't go over too weel, but I got what I needed, and some spices, mix all together and grill. We were skeptical at first, but we really enjoyed them).
Tuesday, pork tenderloin with mashed potatoes
Wednesday, Sasauge, peppers and onions
Thursday, picinc in the park for a summer concert
Friday, wedding reception
Saturday, heading to lighthouse point for the afternoon.
I have TONS of goat cheese and beets (thanks, CSA!)... would you share your recipe? We eat a lot of goat cheese, but I have been really struggling to use the beets.
I'd love to if there was a recipe to share! The beets I used were already cooked and from a package but you can make your own just by roasting the beets. Here's a how-to. I used spring-mixed greens and for the dressing I actually added spicy dijon mustard and honey to an already made Caesar dressing. I don't have measurements, it was just an on-the-fly and to taste mixing. Top the salad with the beets, crumbled goat cheese and grilled chicken and you've got yourself a meal.
