I posted this on What's Baking, too, but thought I may get a good response here since many ofy ou ladies are familiar with alternative cooking and healthy swaps.
Anyways, I disovered the magic ability of Xanthan Gum last night when I was blending up coffee (I worked at Starbucks at one point in my life and realized that the "base" that kept it from being icy was mostly sugar and xanthan gum so I thought it may be worth experimenting...). So then I blended up lots of things in our kitchen, and have spent all morning dreaming of other things to blend. I have seen xanthan gum used in smoothies/milkshakes on a few health blogs I follow (pbfingers.com, etc.) but most of the other information online is in regards to GF baking.
How do you use xanthan gum? Any tips/tricks or recipes? TIA!

I have not used it yet, but if I did it would be as a thickener. I bought tapioca flour instead. I eat paleo and won't thicken anything with grains, flours, etc.
