I was invited to a do a mini lesson as part 2 of an interview. They said I could do a lesson on math or reading/writing. I am thinking about doing reading/writing just because I am stronger at it. I also I probably won't have any kids there just the directors of the program. I have only did this once before but I had kids and it was a full lesson. Any ideas?

Could you not just use the lesson plan you already have and shorten it up a bit? I would assume they want it to be tailored to children (if that is the job you would be applying for), even if you would be presenting it to directors.
I would think if you are comfortable with the lesson plan you've already used, it would be an excellent choice to use in your interview. You won't be nervous about what you are presenting and you will know exactly what to do (so no slip ups or forgetfulnes from gitters).
What age?
My favorite stand-alone lesson I ever saw in an interview is a poetry interruption - read a poem, then ask kids to pick a line and free write, then read the poem allowed and when your line comes up, kids read what they wrote. Really cool and an easy lesson.
