This week's meal plans????
Might as well post on here too and ask what everyone is cooking this week! I got inspiration from a few friends so I thought I'd share. What are you making this week????
Monday: tacos!! Also browning an extra lb of ground beef to make soup for tomorrow's dinner.
Tuesday: stuffed pepper soup
Wednesday: taco salad
Thursday: leftover stuffed pepper soup
Friday: pizza Fridays here, haven't decided on this week's toppings yet.

Tomorrow: stuffed peppers (planning to use quinoa, mushrooms, and ground turkey for the filling)
Wednesday: pork tenderloin, if it's thawed by then, probably making this Maple Pork recipe.
Thursday: probably salmon, but that requires a trip to the fish market
Still figuring out the rest of the week. I have ground bison, so might make American Chop Suey or Lasagna.
Our "good" meals were all used up. We're having a busy week, so our weeknight meals are leftovers or unoriginals like pasta, sausage, and red sauce or pizza.
DH made a great pineapple salsa that we had in fish tacos (halibut lightly battered in krusteaz pancake mix) but he never writes down what he does so I don't have a recipe! I know it had pineapple, a plum tomato, orange pepper, red onion, cilantro, lime juice, and salt. Stuffed it in a flour tortilla and served with rice (long grain rice made in a rice maker with lime juice, pineapple juice, and a little cilantro.)
Looks spot on! Although we made the mistake of using canned pineapple slices that he cut up. Next time definitely going to buy fresh (even if it is the pre-cut kind so we don't have to mess with a whole pineapple).
