We've been looking into building a house and at the moment we are looking at plans. What we want is a 4bedroom 2 1/2-3bathroom house with a study/nursery, eat-in kitchen, and 2 car garage. Ive found all of this in houses ranging from 1500sq ft to 4500 and higher. My question is what would be a good square foot size. I dont want something to small. But i also don't want to end up having to much space either.

We've just moved into our home we've built. We also toured quite a few homes as REAs so we knew what we were looking for. I'd suggest heading out on a Sunday here and there looking at open houses that appeal to you. This way you can get a better idea of size and square footage you would like.
If there are newer construction homes being built in your area, check them out too. This way you can also see the quality of construction by a particular builder and what you like vs what you don't like. Our builder uses steel beams in the basement instead of random polls which make it harder to finish off with out one of them in the way.

This is really hard to answer because personal preference plays a big part of it. I will tell you our experience but it may not fit what you want.
Our first house was 1700 sq. ft. with 3bed/2ba. It was fine when we first got married 8 years ago and has been fine until we had our third child earlier this year. Now we need more room. We are building a home that is 2000 sq. ft. with 4bed/2ba with a formal living room. We are getting an extra bedroom and a formal living room seperate from the family room because I am tired of only having one room for kids to watch movie/play games, grown ups to talk, the baby to have a corner with toys, etc. With the formal living room the kids and baby can be in the family room playing or whatever adn the adults have a nice place to sit.
Anyway, 2000 sq. ft. will meet our needs but your's may be completely different.
Since you want .5-1 more bathroom than we have you will want a little extra space. I think 2000-2500 is a good size house with out being too much. That is just my opinion though.
If you plan to have kids, I'd go at least 2,500 but that's just my opinion.
I like the PPs idea about visiting other model homes to get an idea of square footage.
