Meal Planning

I'm wanting to come up with some new dinner ideas.  With DH's promotion, he's going to be home for dinner more, and we get tired of eating the same thing!  Where do you find new dinner recipes?  What food blogs do you read?  What are some of your favorite dinner recipes? 

I'm impressed with myself...this week, I have tried 2 new recipes, and am trying a 3rd tonight.  In fact, I have it in the crockpot right now :-)

    Thanks!  I use AllRecipes some right now.  I need to get more into pinterest.  I have an account and have pinned somethings that show up on facebook that others have pinned, but other than that, I don't know too much about pinterest.  I don't know how to search for things on it...I need to look more into that :-)

    Yes, I love pinterest!  That's where I find a lot of new recipies.  But you'll get hooked!

  • I agree with Pinterest.  I also like kraftfoods.com for new & easy recipes.  I have a lot of meals on my Pinterest board that I haven't even tried yet, but here are a few of my favorites:

     Chili Rubbed Pork Tenderloin with Apricot Ginger Glaze -- this is actually from All Recipes.  Soooo good.  Even the in-laws were impressed when we made this for the entire family.

    Dijon Chicken Linguine with Chanterelle Mushrooms and Toast Almonds -- I use regular, sliced button mushrooms for this and toast the almonds in the microwave with a cheat I found online!  I also cut the chicken up in bite-size pieces before I cook it.

    Korean Beef Tacos (crock pot) --  I get mixed reviews when people try this, but we love it!!

    Crispy Southwest Chicken Wraps --  Yummy!

    Shrimp Arrabbiata -- Spicy... makes my eyes water, but I love it!

  • I will use cooks.com and foodnetwork.com to find stuff or a twist on a dish I already make. Also I will peruse my many cookbooks and magazines to see if anything catches my eye.

    Oh.. someone recommended kraftfoods.com.  I like that because you can enter in certain items you have on hand and it will pull up recipies that include them.

    I do this too.  My parents have a mighty cookbook collection, so I blame them for wanting to buy more and more of them (Vhati, luckily, doesn't seem to mind).

     While I do look for new things via cookbooks and online, my main way of getting new recipes is just experimenting with stuff and seeing if it turns out edible; so far, so good (almost 4 years going now).

  • My favorite dish to cook is chicken & dumplings.  I brown chicken (I usually use breast meat, but you can throw in legs, thighs, drumsticks-whatever you want).  When mostly cooked, add in chicken stock, diced carrots, celery and mushrooms (you can customize this however you want-add onion, leave out the mushroom, etc), cracked black pepper, salt (if you want-I don't cook with salt whenever possible) and let it cook for a while-at least an hour.  Thicken with a roux (I mix milk and flour, but you can make a real roux by mixing butter and flour and cooking it until it forms a paste), add to the stock until it thickens.

     For the dumplings, I actually use biscuit dough and add in fresh chopped parsley.  Scoop small portions of the dough onto the stock mixture and let cook for maybe another 20 minutes-I try to flip the dumplings halfway through cooking so both sides cook well.

    I also like to make chicken pot pies.  Make a roux of butter and flour and add chicken stock until it gets nice and thick, then add in shredded chicken and whatever veggies you want-peas, carrots, celery, onion, etc.  Pour into ramekins and top with either pastry dough or a thin biscuit layer (yum) and bake.

     I don't like to cook with recipes.  I'm more of a freelancer in the kitchen.
