We did not take our carseat- we used the CARES harness on the plane. Not ony was I not lugging it around on the boat - but there really is no where to store it in cabin. We didn't miss it nor did we need it- we had a five minute cab ride to the boat- while I totally Undersand your concern I was so happy we didn't take ours.
We used a gogobaby traveler during our travels (but never on a cruise ship). It is a little contraption that you can hook to your regular carseat and drag her around in.

There is also the option of getting an inexpensive carseat and a backpack attachment:

There are portable carseat/strollers but they are really expensive.

You know what I am wondering - If you can even strap a car seat down on a bus? Do they have seatbelts or the latch anchors?
