Dinner help

I am having guests over tomorrow evening and I would like to cook a semi nice meal.  Something that is super yummy but hopefully won't take me all day.  I kept thinking something would sound amazing to me this week and so far nothing has.  

 

I am making a chocolate overload cake for dessert but that is all I have...

  • Are you superwoman or something?!  You just had your little man! I'm impressed.  I just made a yummy chicken dish on Pinterest....Boneless skinless chicken breasts, slather them with chive & onion cream cheese, a little pepper & garlic, wrap each breast in 3 slices of bacon.  I cooked them at 400 for 35 minutes, then broiled the bacon until it was crispy on both sides.  It was delicious!  I served it with green beans and a roll. Really easy.

  •  That chicken sounds good, I could add some roasted potatoes and a salad to bulk it up too.

    Far from superwoman...  My mother has been here most days for at least 6 hours and the kids nap for 2 hours at the same time most days (I know that's crazy luck).  Cooking is a stress relief and I am beyond tired of going out to dinner too (my other option for tomorrow night).  I couldn't cook much while I was knocked up so I am kind of enjoying it again.  I have cooked dinner 4 nights in a row, that is how tired I am of going out... I finally made ziti again too!  It was so freaking good!

    As a note to you Boymom, I am taking the "supplements" and I have tons of energy compared to postpartum with DD. I am a believer.    


  • Do you have a Sams card? At Sams they have a sliced brisket made by Jack Daniels. It's actually really good and all you have to do is cover it in foil and pop it in the oven.

  • One of my favorite easy meals is to slater a beef tenderloin in good mustard (not yellow mustard), then coat it in horseradish, salt, and pepper. Quickly sear it on all sides in a nonstick pan that has a little olive oil in it, then bake in the oven at 375 until it's your desired level of doneness (I usually cook it until it's 145-150 degrees, but I like it pretty bloody.) Top it with a compote you make by cooking whole cranberries, some orange zest, the juice of one orange, and a little sugar in a pan over medium heat.
  • I would do something easy in the crockpot. Like a pot roast. You got your meat and sides included. And maybe add a salad.

  • Homeland has some great steaks right now - I would get some steaks (each steak is enough to feed two), make some twice baked pototaes, PW carrots, add some french bread and you are good to go.

    I second this! Throw together a salad, some mashed potatoes or a potato salad, and you're set! If you want to get extra special, make some cornbread.
