So what have you ladies been up to in the kitchen? Have you made or are you preparing to make anything fun soon?
Yesterday I made my first soup of the fall season and I was quite happy with how it turned out since I just kind of threw it together. It was sun dried tomato chicken sausage with kale, white beans, carrots and celery and then I added a little parmesan cheese before serving. It was good!

I made onion rings last night with our dinner (steak) and they were amazing! It was a pinterest recipe, super easy, and healthy! I will absolutly be making these again sometime soon.
Oven to 400
Slice onion however thin/thick you want your rings to be
Set up three separate bowls: 1 flour, 1 egg whites, 1 breadcrumbs (i used panko)
Season the breadcrumbs with onion and garlic powder
Dunk the rings into the flour, then egg, then breadcrumbs and place them on a cooking sheet that has been sprayed with Pam.
Bake in the oven for 20 minutes or until golden brown...I also flipped mine halfway through so they were brown on both sides.

H really loves roasted pecans so I found a really good cinnamon toasted pecans receipe that I am going to try. It is just baked so still very healthy and works for a good snack OR dessert.
Also I think I am going to make enchiladas this week (homemade.) My mom makes this and I think I am going to do it on my own soon. H loves it in fact the whole family does it is just time consuming.
You girls know me and my menu planning--I'm freaking OCD about it...hahaha

Tues: Guavaberry Chicken (we bought this guavaberry liquior on our honeymoon from St. Maarten--H loves the stuff, so I'm going to attempt to cook with it.)

Thurs: Chick-fil-a copycat recipe--H's favorite!
Fri: Thai Curry
Sat: Taste of Newark (we won tickets to this really cool foodie event downtown!)
Sun: Beef Fried Rice
