What's on the menu this week?

I made Black eye peas and ham this Sunday.  It's more like a soup and it's really good!

We had leftover spaghetti, but Jeff killed 3 servings of it last night, so I'll probably defrost some swai fish for a meal or two.

    Last night we had yummy salmon, Brussels sprouts and sweet potatoes. I have no idea what's on the menu the rest of the week. I have been a major slacker with my meal planning. I was better at meal planning before I had a meal planning board.

    I'm having friends over tonight so I'm making lasagna and we'll probably have left overs tomorrow night.  I had intended to meal plan for this week but have had a busy couple days and didn't get around to it.

    This week is going to be interesting since we?re leaving town I don?t want to do a big grocery shop, or throw a crockpot meal together

     

    Monday ? leftover mini sandwiches from MIL?s surprise 60th

    Tuesday ? veggie Panini? I also have some fish in the freezer that I can cook up

    Wednesday ? welcome home party for BIL. I was going to bring a veggie pad thai for everyone

    Thursday ? no idea maybe grilled chicken salads

    Friday ? out of town

    Saturday ? out of town

    I'm keeping it simple this week.  Nothing too fancy because I have a lot of meetings/trainings after school. 

    I am making spaghetti sauce right now, though, so I feel somewhat domestic.
