Lunch ideas?????

I know I have asked this before.... humor me..

My gals and I are trying to save money and eat healthier too.  We need lunch ideas besides salads and sandwiches.  We have a fridge and microwave at work.  

So far we've agreed to keep baby carrots, snow pea pods and fruit on hand for snacking.

What are some of your favorite portable lunches?

  • I love bringing frozen edamame to work and microwaving it, throw a dash of salt and you have a delicious fiber/protein filled snack or part of lunch!

    You can take turns cooking chicken breats bring them in a microwave them for lunch.

    Homemade soups are always good too!

  • i always make extra for dinner and take that the next day b/c i get so sick of sandwiches.

  • You could keep some hummus in the fridge. Goes well with the veggies or even pretzlss. Very filling

  • most of the time, i bring dinner leftovers to work for lunch.

    are you talking about what to bring for yourself, or is your work group taking turns making lunch for everyone else?

    sometimes in the fall or winter, i'll make chili or soup or ratatouille on a sunday and eat it for a few days for work lunches.

    or instead of regular turkey sandwich, i might buy turkey pastrami instead, or make it on a tortilla as a roll up, and i'll mash some avocado and add some spinach leaves too - seems much nicer than regular turkey and mayo on two slices of bread!
