What's cooking?

I actually meal planned this week!  AND I made a batch of chicken noodle soup last night to have for lunch a few days this week since I came down with a head cold.

Also, big news from me.  I think I may have found a green vegetable that I like in asparagus!  Yay!

Sunday: leftover chicken, mini corn on the cob, asparagus in a dijon vinaigrette

Monday: Ham slice with pierogies and a side salat

Tuesday: Chicken piccata with brown rice and green beans (I'm trying to make myself like them)

Wednesday: Pork chops with mashed potatoes

Thursday: My kid turns 1!!  We're having the grandparents over for cake and ice cream so I'll be scrounging up leftovers before they come over.

Friday: Healthy baked chicken nuggets with homemade zesty fries

Saturday: Out for a party

Re: What's cooking?

  • Mon - pork chops on the grill with a peach mustard glaze, stove-top (yum - I never make this and I'm sooooo excited!) and applesauce

    Tues - friends are coming for dinner to visit our little lady.  I think they are bringing stuff to make salads with grilled chicken

    Weds - Eggplant parm and pasta

    Thurs - something on the grill from my freezer stash

    Fri-Sun down the shore :)

  • Last night it was just me so I made a quinoa/black bean/tomato/corn concoction.

    Mon - slow cooker lentil stew with polenta, spinach salad

    Tue - salmon, roasted brussel sprouts, roasted potatoes

    Wed - spaghetti carbonara, salad

    thur - Asian beef & broccoli

    fri- tbd

  • Jess - I make asparagus a lot because it's one of the few green veggies that DH likes.  Usually I just roast in the oven with olive oil, salt and pepper, and then grate some parm cheese over the top when they are done cooking.  So easy and so good!

  • Last night- Roasted chicken with rice and steamed veggies.

    I bought a bunch of stuff for the rest of the week which I need to figure out.  Between me not liking things now and DH wanting to go on a diet to lower his cholesterol, this should be interesting.

    Any suggestions on good recipes for someone watching their cholesterol?

    The rest of the week is undecided, I really need to hit the food store.

  • ugh i just cringed when i seen this. Still in vacay mode and not a thing in my house to eat, luckily mom came to the rescue for tonight and brought over a pot of gravy so we will have gnocchis and meatballs tonight- so much for starting this week off with healthy eating... I will somehow have to get to the store to get meals for the week in between ccd and hockey games tonight so I am looking forward to seeing what others have planned since i have zilch

    ETA- this is what I came up with, boring but it is a plan

    Tues- Boston Market whole chicken and sides since we had to rush to doctor's appts

    Wed- roasted pork loin, sweet potato mash, mixed veggies

    Thurs- grilled filet, baked potatoes, cucumber salad

    Fri- I'm going out so probably pizza for the boys

    Sat- wedding

  • I'd like to preface this post by saying that people are not kidding when they tell you that the excitement is just not as great among family/friends after having a second baby- when we had Aisling people made us freezer meals, came over with dinner for us, etc. for the first few weeks.  This time, I had one friend bring over lunch the other day, and that's about it.  Boo.

    Anyway, I do have a pretty stocked freezer/pantry, but have to get the time and energy to be motivated to figure out what to do with it all.  So far, all I've got is:

    Monday: Chicken/noodle/veggie casserole

    Tuesday: BLT sandwiches (have some lettuce & tomato we need to use)

    Saturday: probably take-out or eating out, as we are running from swim lessons to Linvilla to DH's college homecoming

    Sunday: Eating at my cousin's house, where we will be gathering to meet/greet my grandmom's cousins who will be over from Ireland for the first time in 50 years.
