Cooking Club - keeping it simple!!

This week's theme is "5 Ingredients or Less."

So share those super easy meals that you can whip up with just a few ingredients.

I know I've spent enough time and money hunting down a list of 15 ingredients for some recipes, so I appreciate a short and simple list for sure!

  • Tonight's supper was spaghetti squash (roasted with just a little salt, pepper, garlic powder, and drizzle of olive oil). Paired that with sweet Italian chicken sausage, and a side of spinach and roasted red peppers sauteed in Italian dressing. Minus my seasonings for the spaghetti squash, this whole meal was 5 ingredients! :)


    Another go-to... This variation on a Chicken Florentine: 1 pound of pasta (I use whole grain) + 1 package of frozen chopped spinach (or fresh baby spinach) + chicken breast (diced bite size) + olive oil. Saute or grilled chicken & cook frozen spinach. Combine cooked pasta, chicken, and spinach, and drizzle with olive oil to coat. S&P to taste.

    *if using fresh spinach, you can leave it as is and just toss with the chicken & pasta. You can substitute balsamic viniagrette or other salad dressing for the oil... Another change up still within the 5 ingredients: add some cheese (mozzarella or parmesan both work well).

  • We love fajitas in our house. Tortillas, grated cheese, your choice of meat (chix is my personal favorite), onion, and peppers. Although usually we serve with rice, which makes 6... oops!

    My go-to super simple meal is Barilla dried tortellini (in the pasta aisle, in a bag) with spinach and cheese filling. Cook that up, some red sauce, and garlic bread and you're done!

    I'll try to think of more of our easy meals...

  • My favorite easy meal lately is edamame risotto. If you don't like edamame (like my husband) you can swap for peas, but I like the crunch it gives. Risotto is easy and fast, but just annoying because you are stuck at the stove stirring. But I swear its only for 20 minutes.

    Onion

    Risotto

    3 1/ 2 cups Chicken Broth (and 1 cup white wine for flavor<--or you can leave out the wine but it gives it a great flavor)

    Edamame

    Salt and Pepper and Lemon

    Brown the onion. Add risotto, brown in pan for 1-2 minutes. Add chicken broth one cup at a time and stir and stir and stir until it is absorbed. Do the same thing with the wine. Add salt and pepper to taste, a tiny bit of lemon juice and some zest and throw in the edamame (shelled and uncooked).

    If you like, I add chicken sometimes too if I have it cooked and in the fridge, or you could add pancetta or bacon. Sometimes I swap the tarragon for sage, leave out the edamame and just do it with chicken.

  • Our other go-to easiest dinner are the pizza gourment shells <--- these are my favorite!! (you can get them at Dave's, Seabra and I've seen them at East side marketplace)
    They are SOOO good. Just top and you are go from oven to the table in less than 10 minutes.
  • OK, I know this recipe is technically 10 ingredients, but it's mostly kitchen staples. Salt, pepper, olive oil, pasta, parmesan cheese... Only things you really need to buy may be the basil, lemon, heavy cream and shallot. Love this recipe (originaly from America's Test Kitchen) though!

  • hehe I don't consider pantry basics to be ingredients, so that works. And I've never made that one Alicia, may have to add to the list!
