Desserts

I'm making desserts for a church dinner next weekend. I was told "Make whatever", so I thought I'd put it out to ya'll. What would you like to see?

The menu is pulled port sandwiches, coleslaw, and a green salad.

So pretty informal, only about 50 people. I was initially thinking pie, but that's not my forte, I'm a great cookie, brownie, cake kinda girl.

Re: Desserts

  • How about a cookie platter?  Maybe make 3 different types, or two types plus brownies.

Often, I don't feel like eating a full dessert right after dinner, but cookies are small enough that I can still find room to nibble on one or two.

  • I like cookies or cupcakes. Anything that doesn't require plates and utensils to eat.

  • Even though you said you aren't a pie person, key lime pie is one of the easiest. No top crust needed and I think it goes along with the food menu well.
  • At our annual end of season potluck at my other job, brownies are always a big hit. Also, someone always makes "Dirt" which goes in like 2.2 seconds.

One of the neatest things someone brought this year (not dessert though) was a cornbread muffin topped with blue cheese dressing with a buffalo wing on top.  I thought it was very creative although people were like how do you eat this thing?  I think you had to take it entirely apart.

  • Not sure if nut allergies are an issue, but Peanut Butter Tandy Kakes.  Amazing:

    Peanut Butter Tandy Kake

    • 2 Tbsp butter
    • 1 cup cold milk
    • 4 eggs
    • 2 cups sugar
    • 1 tsp vanilla
    • 1 tsp baking powder
    • pinch of salt
    • 2 cups flour
    • 1 jar smooth peanut butter
    • 8oz milk chocolate

    1. Preheat oven to 350 degrees.
    2. Scold milk and butter in saucepan. Set aside to cool.
    3. Combine the next 6 ingredients with the cooled mixture until smooth. (You can use an electric mixer. I whisked by hand) Pour into a greased 9x13 baking dish.
    4. Bake for 25-35 minutes, until cake is set.
    5. Spread 1/2 - 3/4 of jar of peanut butter on hot cake and put in refrigerator until cool.
    6. Over a double boiler, melt chocolate and spread on cooled cake. Refrigerate again until chocolate is hard.
