S/O Dinner

What foods/meals always seem to make it into your dinner rotation? 

For us these are the quickest/easiest meals that don't require me going to the store for fresh ingredients:

Chicken/veggie stir-fry with rice

Wedding soup with sour dough rolls ( I always make a huge batch and freeze several containers of it before I add the couscous/pasta and the sour dough rolls are from the freezer too)

Popcorn chicken and french fries (can't get much easier than that!)

Venison sausage and baked mac & cheese

Shrimp and feta pasta

Cheesesteak baked potatos

  • What are cheese steak baked potatoes?

    Do you actually make popcorn chicken, or buy frozen? 

     

    Some that we make all of the time are tacos (just Ortega but the kids actually eat them), baked chicken tenders, Sheppard's pie, grilled steak, roasted veggies and chili.

  • Cheese steak baked potatoes are just baked potatoes topped with thinkly sliced round steak (I cook it in the crockpot with broth and oinion soup mix) and cheese.  DH and DD eat sauteed mushrooms and onions on theirs.

    Popcorn chicken is frozen from a bag.  Usually from Sam's Club or Costco.

    That sounds like something DH would like (minus mushrooms) -- we'll have to try that! I bet you could even throw onions into the crockpot with the steak... I've done that before and they're pretty good that way.

I sort of make it a game, to see how long we can last on the odd mismatched items that are left in the house a week after my last trip to the store. 

  • pork chops - DH makes & they are awesome & girls love

    pepperoni casserole

    tacos

    green beans with parm cheese

    pulled pork sandwiches

    some kind of pasta

    homemade mac & cheese

    Hot dogs and mac n cheese (boxed)

    Salsa Chicken

    Italian Chicken

    Spaghetti Squash hash

    We buy side of beef every year and my family butchers it, so it's already sliced for us.  We call them "chip steaks" so I'm not sure if that cut is sold in grocery stores--but I do know that it is round steak.  I'm guessing it's probably a lb or so of meat.  It fits in my little crockpot. 

    Then I add one can of broth and the packet of onion soup mix.  If I don't have beef broth, I've also used a bullion cube and water. :-)

    I am a champion at this game and I pick up random items at the market in our neighborhood in order to avoid a trip to the big grocery store.

    But now that I have made an interesting meal plan and shopped three weeks in a row (gasp!) that my shopping list and the time it takes me to shop each week is getting shorter. When i go several weeks without shopping we run out of a lot of stuff and the list-making and shopping seem to take forever. Plus the huge bill makes me feel bad. This past Sunday I went shopping with Heather and everything fit in the tiny kids cart and a hand-held basket.

    To answer Amy's question, these are the items I try to always have in my freezer and cabinet to round out or make meals:

    frozen, breaded chicken and fish sticks

    peas, carrots, broccoli bites and sweet potato fries

    pizza dough

    mac'n'cheese, noodles with sauce, rice, tomato soup, couscous

    And I am finding that most of the crockpot meals that I have been trying lately make more than we can eat, so suddenly I have some good frozen food available for those nights that I get home late or am avoiding the store!

    I make them with ham. Ham steaks are easy -- I just put them in the mic for a few min with brown sugar and mustard, then brown them on the grill for a few more min. 

  • I'm trying to do more fish (my health consultant at work says to try to get 3 fish dinners in per week) and tilapia is usually our go to since it's quick and easy. Otherwise pasta with a bunch of veggies and tacos are our staples.
