DIY frozen breakfast burritos
Has anybody made these? I've been seeing these all over Pinterest. It seems like a really good breakfast idea (make a big batch, freeze, and microwave one at a time). I'm just curious how well the egg, cheese, bacon freezes and then reheats. I don't want to waste a dozen eggs if it's not going to be edible.

I read that the trick is to make sure that they are "dry" so that when you refridgerate/freeze then re-heat they don't turn to mush. With the "egg muffins' one blogger said to take them out and cool them on a cookie rack.
I had no idea you could freeze cheese. You learn something new every day.
Well some cheese freezes better than others. I wouldn't try freezing anything fancy or a soft cheese. But something like a block of cheddar shredded into a burrito would not cause me to worry. Plus if you plan on melting hte cheese after you defrost it, any minor texture changes wouldn't be so noticeable.
