Anyone have any recipes they are making this week (or have made recently) that they want to share?
Re: Menu Monday
I made this last week and loved it. I used the kidney beans with chili seasoning and the diced tomatoes with chilis and garlic because a friend who made it before me said it was a little bland the way the original recipe was made.

Last week we did Chicken and Wild rice w/ carrots in the crock pot!! One of our favorite let it cook all day meals:
The chicken is so tender and it's a whole meal all in one pot so we really enjoy this dish!!
I found this on Pinterest and made it last night. H LOVED it, which is saying a lot because he's pretty picky. It was really easy, really yummy, and very easy to clean up.

this has been on my "to make" list for the longest time! glad to hear it turned out good
My H isn't home to cook dinner for.
I'm boring and usually cook rice and a friend egg, or rice and chicken, or I make myself a sandwich. haha
I did lots of experimenting last week, via Pinterest. H bought a pumpkin and I made my own pumpkin puree and roasted the seeds. I used the puree to make these cookies: http://www.kitchencorners.com/2008/10/vegan-pumpkin-oatmeal-chocolate-chip.html.
I also roasted sweet potato like this: http://www.edibleperspective.com/home/2010/3/27/simplicity.html, and I made this soup: http://www.manifestvegan.com/2011/10/sweet-potato-cauliflower-soup/.
