  • I'm getting sad that this board is so quiet lately. I know we are all "moving" on from the wedding but its was so fun to chit chat.

     Um here are my go-to's for the week:

     Edamame Risotto

    Risotto seems hard but its really easy.

    Arribo rice

    3 cups chicken broth

    1 cup white wine

    1/2 yellow onion

    1 Cup edamame (shelled)

    1 lemon- zested

    Chicken (breast, cooked nad diced 1-2)

    Salt and Pepper to taste

    Sage (the recipe calls for tarragon but I don't like hte taste so i use sage)

    3/4 cup paramesan cheese (fresh is best, or use shredded bagged)

    You basically follow the directions on the package to make the risotto. Frist cook the onion 1-2 minutes, then add the rice and stir around for a minute. Start adding broth 1 cup at a time.  Basically stirring adding a cup of chicken broth stir until its absorbed, stir in wine, do the same. It takes about 25 minutes. Try it, if its still a bit hard, add another 1/2 cup of wine or broth. (if you add more wine it gives it a stronger wine flavor). Season with salt and pepper, stir in 1/2 cup paramasean grated. Add in cooked chicken and sage, edamame, squeeze the juice of one lemon in stir. Keep stirring another 3-4 minutes. Plate them and add grated parm on top. Enjoy!

    You can do this recipe adding as much or as little of stuff as you want. We've added fresh tomatoes. Basil and motzerella. We've added salmon and lemon. Etc.

     

    Another go to dinner are Chicken Lettuce wraps. These are super easy

    Ground Chicken

    Boston Bibb Lettuce( or ice berg)

    Water chesnuts

    peanut butter

    soy sauce

    sesame oil

    rice vinegar

    Onion (yellow)

    and any other veggies you want to add (yellow peppers work well, green onions, etc)

    Cook onion with a 2 tbsp sesame oil, add in ground chicken, cook until done (about 5-6 minutes). In the microwave heat up about 4 tbsp of soy sauce with 1 tbsp peanut butter for 15 seconds, stir. (sometimes i make more of this sauce---it just depends how "peanuty" you want it) Add the the chicken and oil and mix. Add a dash of rice vinegar. Stir in water chestnuts, and peppers (if using), green onion, salt and pepper to taste, hot red pepper flakes if you like it a bit spicey. SEve in lettuce leaf as a wrap. You can even toss some peanuts on top for an extra crunch.

    my dh and i started walking at night becuas we've been using all our new wedding gifts and cooking stuff and baking a lot more, so we have to counteract the calories...

    I noticed that about the sept board too!

    We just moved so every night and most of the weekend we are unpacking, building new furniture, running errands, and setting things up. I feel like I am always on my feet when I am home! Which I hope is counteracting my calorie intake. Something about the chilly weather gets my appetite going all through the day and night :(
