Menu help-my mind is blank.
We're doing a small birthday party for Max in a couple weeks. We'll be outside at a picnic area. It's from 10:30-12:30, so I'm going to do bagels and cream cheese, fruit salad and muffins (and "cupcakes" which will actually be the muffins decorated)
I feel like I need something else-maybe something savory, but I don't know what. Any ideas?
Here are the rules:
- Has to be egg free (or able to be modified to be egg free)
- Has to be able to sit out for 2 hours without spoiling in potentially 80 degree weather (we'll have a cooler tho)
- Can't be obscenely hard to make. I'd like to not have to wake up at 5 that morning to make things and DH is already rolling his eyes at me.
Thanks!
Re: Menu help-my mind is blank.
oh the muffins I'm making are vegan pumpkin ones.
nevermind.
how about vegan soft pretzels? pretzels are pretty easy to make and omg so good.
oooh this is a good idea!
how about a little parfait set up? Yogurt, granola, nuts, and you already planned on fresh fruit. You can buy individual cups of Yogurt and put them in a bowl over ice or in the cooler until serving time.
Two hours isn't that long for food to be out but not sure how humid or hot it is out there. I think hummus and pita bread, tuna/chicken salad with crackers, bruschetta (BJ's has an awesome brand) would be fine being out for an hour or so while people fill up their plates.
Or how about croissants, scones and danishes if you can find egg free, I would do a tray of assorted ones along with muffins and banana or zucchini bread. And I apologize, I don't know how difficult it is to find these things, maybe a local bakery?
And set up assorted juices for drinks along with coffee

I like the yogurt and granola idea, i'm going to do that!
There's actually a vegan/gluten free bakery around the corner from us but I think it's kind of gross and over priced. BUT the trader joes' frozen croissants are egg free if you don't brush them for shine...hmmmm....
Hmm, what if you did the egg free croissants and made mini sandwiches up with ham & cheese? Or turkey? Provided your guests aren't vegetarians, ham & cheese still goes with the brunch vibe you have going.
