Re: Menus

  • S- put off grocery shopping again so we had spaghetti

    M- Rotisserie chicken, fries

    T- Pancakes and Sausages (kev wasn't home)

    W- porkchops and mac n cheese (if I actually have the chops in the freezer like I think I do)

    T- hotdogs/soup (I will not be home, work happy hour)

    F- dinner at my mom and dads

    Just an uninspired week for us.  I hope to make up for it this weekend and next week. 

  • Saturday: Chinese

    Sunday: DH grilled two venison sirloins and made venison meatballs for the majority of meals this week. Sunday night we had: sirloin, mashed potatoes and glazed carrots

    Monday: I worked; the boys had leftovers from Sunday

    Tuesday: the wee men had meatballs and pasta; I had leftover Chinese; DH wasn't hungry

    Wednesday: I'll have a steak salad; the boys will have leftover meatballs and pasta; DH will have steak sandwiches

    Thursday: probably an easy night of steak leftovers for DH and I, the boys oven baked chicken nuggets, and I'll make a veggie of some sort

    Friday-Saturday: I work, so I'm sure one night will be frozen pizza

    Sunday: between catching up on laundry and (hopefully) us tackling the garage, I'm hoping for takeout!

    Monday - 2 peanut butter and jelly sandwiches

    Tuesday - my mom brought me roast and cauliflower!

    Wednesday - chili my sweet coworker gave me

    Thursday - Hot dogs

    Friday - I have no idea

    Saturday - I have no idea

    Casey went back to work on Monday. I don't have the free hands to cook dinner until after G goes to bed - and by that time anything I think about making is too time consuming or too heavy. I'm thinking I need to make a few things on Sunday so I have real, grown up food for the week.

    It just seems that most crockpot recipes are "5-6" hours. I'm out of the house almost 13 hours w/ taking G to the babysitter and work. Blargh.

  • Sunday ? leftover pizza (we had a busy afternoon and didn't have time to cook)

     

    Monday ? beef enchiladas and Spanish rice

     

    Tuesday ? bbq ribs in the oven. Salad, and a Knorr?s Pasta Side

     

    Wednesday ? Turkey Bacon, egg, and cheese sandwiches and tator tots

     

    Thursday ? leftover beef enchiladas and salad

     

    Friday ? I think we?ll be having crab cakes (for me) and beer battered fish (for DH and DD) with mac n cheese and stewed tomatoes

    Our first year we did a LOT of grilling (burgers and dogs)!

    For your crockpot, though, buy a timer (like you plug lamps into when you're away). Have it cook the first 5-6 hrs you're gone and then it shuts off (or a little less time-wise for allowing it to "cook up" as it cools down). Then all you have to do is nuke it when you get home. :)

    But we're doing the same thing - cooking on Sunday for the week like we did this past week with sirloins: hot meal the first night or two, then steak salads, steak sandwiches, etc. It's tough, but you'll find a rhythm!

    I'm a slacker with no menu plan this week, but when I do plan ahead, I'll throw together a casserole (stuffed shells; chicken and biscuits; chicken and rice; pork and stuffing; bruschetta chicken) the night before and put it in the fridge (usually in a 9X13 or 8X8 pan with a lid).  Then the next day when I get home all Ihave to do is pop it in the oven. 

    Prior to having DS I did a lot of freezer meals/freezer cooking as well.  I'd really like to get back into the habit because it was so convenient.  I'd make a marinade and put the meat into freezer bags and freeze it.  Then I'd pull it out the day before I wanted to make it and I'd let it unthaw and marinate.  This worked out great for bone in chicken breasts.

  • Sunday: hamburgers with sauteed green pepper and onion and mojack cheese. Salads with blackberry walnut dressing we picked up at Schramm's.

    Monday: cheese ravioli with semi-homemade meat sauce. Rolls.

    Tuesday: roast in the crock pot with onions and green peppers, baked potatoes.

    Wednesday: ruebans with roasted broccoli w/ breadcrumbs and shredded cheddar.

    Thursday-Sunday: I'm working :( so fam on their own.

    I am too, but most of my things turn out fine. I usually low ball the time, since my "keep warm" setting is pretty high.

  • Sunday - we were gone all day so the kids just had spaghetti-o's and dh & I had leftovers & salad Monday - frozen ravioli, rotisserie chicken & breadsticks Tuesday - fish sticks & green bean fries for Hayden, french bread pizza for the rest of us Wednesday - ? Thursday - Maybe I'll actually make something from Pinterest Friday - grilled cheese & tomato soup Saturday - going to Oktoberfest at the Teutonia Sunday - we're going to Hallowboo @ Idlewild so probably something out

  • Thank you all so much. I'm just having such a hard time b/c it's a logistical nightmare. Casey is working on another movie and the hours are not predictable. I'm pretty much a single mom Monday-Friday. On early days he gets home around 8:30p. 

    I'm going to really try to do some make-ahead stuff on Sunday. Wish me luck!
