This is my friends shrimp skewer recipe. They come out great, we make them at every cookout during the summer. They would be good over pasta too.
The key is to marinate them overnight!! You have to do that, or they don't taste the same- I swear.

Halibut Cakes & Chili-Mayo Sauce
Ingredients: Chili-Mayo Sauce
1/2 cup mayonnaise
1/4 tsp black pepper
2 tsp chili paste
1/16 tsp cayenne pepper
1.25 tsp lemon juice
3/8 tsp garlic powder
Ingredients: Fishcakes
1 lb Halibut, coarsely chopped (or other white fish)
2 tsp lemon juice
1/2 cup chopped onion
3 tops scallion, chopped
2.5 tsp chopped fresh parsley
1 large egg, beaten
1 cup panko and fine breadcrumbs blended to
make fish form into cakes
2/3 of the chili-mayo sauce from above
Vegetable oil
Extra breadcrumbs mixed with seasoned salt &
pepper
Preparation:
? Mix all ingredients for chili-mayo sauce.
Cover & refrigerate.
? Mix all ingredients for fish cakes.
? Form mixture into eight 1/2?-thick cakes,
using approx 1/2 cup for each
? Dredge cakes in breadcrumbs, turning to
coat.
? Place on baking sheet. Refrigerate 1hr-
8hrs to ?set? cakes.
? Heat oil in skillet. Working in batches,
add fish cakes and cook until golden
brown and cooked through, about 5
minutes per side.
? Transfer to plates and serve with chilimayo
sauce
Teriyaki salmon and salad with honey-lime dressing
So... I do not have this recipe saved online and I am not at home with the cookbook. I will do my best to update later with a better teriyaki recipe - but just buying teriyaki sauce is fine.
Marinate salmon in teriyaki sauce for 30 min - 1 hour. Cook how you like (we prefer to grill it, skin down, basting with the extra marinade).
Honey-lime salad dressing: vigorously beat/shake 1/4 cup olive oil, 1/8 cup honey, juice of 1 lime, zest of 1 lime, and 1/4 tsp nutmeg until it is combined.
Serve over bed of mixed greens with green bell pepper, orange bell pepper, red onion, and avocado slices.
