what's cooking?

I've been absolutely terrible about meal planning lately and I need to get back in the swing of things!

Monday: scrambled eggs, aka breakfast for dinner

Tuesday: ham and pierogies and a veg

Wednesday: chicken and couscous and a veg

Thursday: unsure

Friday: I'll be at happy hour so who knows?

Saturday: we're doing Linvilla that day so I think I might just make a pizza that night.

  • I've been so bad with this lately. I took out skinless boneless chicken breasts this morning but I have no clue what I'm doing with them.

    Tonight we're going food shopping so I'm hoping for some motivation. It's so bad I had plain cheerios this morning with no milk bc we didn't have any.

  • I'm still working on my freezer stash that I prepped while I was nesting.  Unfortunately some of my marinades were duds, but gotta plow through anyway, haha.

    Mon - girls' night...chicken quesadillas

    Tues - crock pot honey sesame chicken, edamame, rice

    Weds - Salmon, roasted potatoes, asparagus

    Thurs - leftover sesame chicken

    Fri - pizza night

    Disclaimer: I have never tried this before. It's two step.  I was going to make the filling tomorrow night and then make the enchiladas in the oven on Wed. with the filling.  I find it is 10405050 times easier to cook stufff in the crockpot the night before, since I am running late just about every morning!

  • Last night I made French Chicken In A Pot so I'll be using the leftover chicken to make an Asian Turkey Noodle Soup with Bok Choy, but subbing chicken

     Tues - out to dinner - we have a groupon to the Temperance House

    Wed - an attempt at making Haluski - it's a Polish dish of cabbage and noodles, roasted cauliflower

    Thur - pierogies with cabbage and apples

    Fri - I have a huge head of escarole so I found a recipe for Escarole and White Bean Sauce with garlic and oregano and I'm going to throw it on some pasta

    Couple things - I can't believe you can cook chicken, let alone cook at all! Good for you! My poor H hasnt had a homecooked meal by me since I got ku'd.

    Also - fun fact - this is how i eat my cheerios every morning. i hate soggy cereal.

    Oh I should clarify..I also haven't cooked at all. I just take things out and he makes them haha.

  • Now that no one in the Del household is sick for the first time in three weeks, we have a full week of dinners...

    Sun- gnocchi and gravy, meatballs, pork, veal, salad and caramel apple walnut pie. I also made homemade pistachio custard for MIL's birthday and it was amazing

    Mon- chili is brewing on the stove

    Tues- pot roast with potatoes and carrots, side of zucchini, and I already prepped my crockpot so I just need to plug it in tomorrow morning, I feel like  rock star for being prepared

    Wed- leftover gravy with pasta and salad

    Thurs- school halloween party

    Fri- pizza at a halloween function

    Sat- wine! my kids will eat whatever the nice sitter feeds them

    I used to be horrendous at cooking roasts but now I can get them perfect every time. My roasts used to be almost like a sold, dry brick. The key is to cook them low low low low and slooooooooooooooow. Also, you need to get the fattiest piece of meat that you can find. The more marbling, the better. That with cooking it at a low temp for a long time will make the meat just fall apart. I throw it in the crock (or roaster in the oven) with some beef broth, a beef bullion cube or two, potatoes, onions, carrots, celery (sometimes if I'm feelin' it), and any seasoning you want like garlic powder/salt, pepper, etc. Comes out perfect every time. 

    ETA: And the #1 crock potting rule of all time - DO NOT open the lid of the crock pot to check on it 1,000 times a day. You'll release the suction and it F's it all up.

  • hmm, Heather, maybe that is my problem.  I don't open it, but the lid broke and it just sits on top.

    And as you described your roasts in the past, a solid dry brick, that was my roast on sunday.  i cooked it from 11am till about 4pm on low. 

    I think I need a new crock pot.
