halloween night

We have two young children (3 yrs and 20 months) and are hosting a small get-together on Halloween with two other families with young children. One family lives in our neighborhood and one doesn't, but we'll all be trick-or-treating. Last year I did chili and the year before BBQ pork, so I'd like to offer something different this year.

This needs to be something I can put together ahead of time, and doesn't need much tending at the time of the party, because I also need to hand out candy and take my own children trick-or-treating to a few houses.

I'm stuck in a rut. I could do lasagna, but that just seems so boring.

Any suggestions?

  • What about tacos?  You can prep everything beforehand, and cook (or just keep warm) the meat.  Ground beef is pretty standard, but the crock pot salsa chicken is also very good.

    Maybe meatball sliders?  Make smaller meatballs, and buy small smaller rolls.  Put out provolone and mozzarella cheese, and serve with an Italian salad.

    Hot roast pork or roast beef are another options.

  • I'd lean toward a soup and sandwich night.  Veggie/chili/potato/pumpkin and you can either set out a deli platter or premake some sandwiches (and have some pb&j on hand).
  • Hi!  This is what I made.  Zucchini Enchiladas can be frozen and reheated - if you like.  I made this during the summer once and it worked out really well.

     Also... for my girls' birthday party earlier this month I made a beef stew and baked it inside a pumpkin.   Was very festive and nice - but you have to be in the house and it is a bit of prep work etc. day of.  There is also a great Pumpkin Mac-n-Cheese recipe that I used from this board as well - if you like I can repost it for you.  (Was from Wingit).

     Hi!  Ms. jjcjenn1 - here is Wingit's Recipe:

    Pumpkin Mac & cheese taken from a BHG magazine clipping who knows how long ago:

    2 c macaroni
    2Tbsp butter
    2Tbsp flour
    1c whipping cream
    1c whole milk
    4 oz fontina cheese shredded
    15oz can pumpkin puree
    1Tbsp fresh sage or 1/2 tsp dried sage
    1/2 soft bread crumbs
    1/2c grated parm
    1/3 cup chopped walnuts (i've always omitted this)
    1 Tsp olive oil

    preheat oven to 350. Cook pasta, drain. in a medium saucepan melt butter stir in flower, 1/2 tsp salt & 1/2 tsp pepper. Add cream & milk at once. C ooker until thickened & bubbly. Stir in fontina, pumpkin & sage until cheese is melted. stir sauce into pasta. trnsfer to ungreased baking dish. In abowl, combine breadcrumbs, parm, nuts & oil; sprinkle over pasta. bake, uncovered 30 min or until bubbly and top is golden. let stand 10 min before serving and garnish with extra sage (optional).

    Something about the fontina & pumpkin that makes it very creamy, not curdly and not too pumpkiny. Hope you love it!

     

    I could also type out the Pumpkin Stew Recipe if you guys want that one too!  It's pretty good but a lot of work and have to be at home.

  • My favorite go-to easy entertaining meal is soup in a bread bowl. You can prepare the soup(s) ahead of time as well as the bowls and people always just love it. So easy.

    We love having chili in these the most and set up a little toppings bar with sour cream, cheeses, crackers, etc.
