Healthy meals for picky friend?

I have a friend who will be giving birth sometime this month.  She is definitely a picky eater to the extreme.  If it's healthy, she unfortunately won't eat it.  :-(

The only fruit she will eat are apples.  No vegetables (unless potatoes count).  She likes meat and carbs.  I want to feed her something nutritious, not only because she will need it for the energy a new baby requires, but just simply out of principle.  I love her to death, but I'm at a loss as to what to make her, besides burgers and chicken quesadillas.

  • Do you think you could blend some veggies into a chili or pasta sauce? 
  • Do you have much experience with squash? 

    That might be the way to go. Or start just substituting.. 

    Use quinoa noodles instead of regular noodles, add nutritional yeast to things for the added protein, etc.

  • I don't think you can change an unwilling adults eating habits. If you're trying to be a helpful friend, I'd bring something that you know she likes. She has to decide to change on her own. In my opinion, I don't believe in hiding veggies on adults.

    This.  Even though I agree with you that she needs to start incorporating healthier foods into her diet, it has to be her own decision. What's the point of making her one thing if its just going to get tossed?  Why not make a casserole that you know she'll like, and you low fat ingredients?  Like creamy taco Mac & cheese, using ground turkey, white wheat pasta, and low fat cheese & sour cream.

    i totally agree, i am actually quite similar to your friend. I have alot of texture issues and fruits and veggies just dont work for me. I always try them but I cant get past it. Just make her something you know she likes so at least she is eating something! Its one less thing for her to worry about. A good friend of mine just had twins- i made her baked ziti two weeks ago and today i just put Shredded Chicken Tacos in the crockpot to bring to her tomorrow.
