What's cooking?

Wake up ladies!  It's deader than dead in here today!  What's on the menu this week?

Tuesday: *edit* crock pot pot roast and veggies

Wednesday: Skinnytaste chicken enchiladas (link)

Thursday: leftovers

Friday: unsure.  I think I want to make homemade chicken nuggets

Saturday: Dinner out for our anniversary

Sunday: Not sure.  Something in the crock pot ideally.

  • Last night we had dinner at a friends.

Tonight - Chicken a la king with DH's favorite Pillsbury biscuits.

Tuesday - baked breaded eggplant slices with marinana and mozz cheese served with spagetti.

Wednesday - either fajitas and rice or pork chops with stuffing and a veggie.

Thursday, Fri and Saturday it's just me and the munchkin, so I have no idea what I'll be throwing together.

  • Sun- Never got to making a soup so maybe this next weekend. I did try this new recipe and it was really good, everyone in the Del household approved.

    Tues- homemade burgers and fries

    Wed- shrimp scampi

Thurs- filet, mash, zucchini. grill is out of gas so either I need to fill it up or this is all going in the oven

  • Well, considering we were able to salvage about 5 things from our freezer to store in BIL's last week, my options are limited.  We finally got power back on Saturday and all I was able to get were some basics to hold us over.  I was going to go major grocery shopping Saturday to replace everything we lost in the power outage, but DH went down to Brigantine to help his mom clean her house after stupid Sandy and left me with DD (and I need the entire shopping cart!).  So we will be making do with what we have left until I can get out.

In other news, my breast milk survived!

    Items that I can cook:

goat cheese ravs with roasted red pepper sauce

    salmon

peach and mustard pork chops (kinda wish these didn't survive - I prepped them before I had DD and they were kinda blah).

  • Working late a few nights, so trying to keep things simple.

Last night--went to the diner in our neighborhood because we didn't feel like cooking.

    Tonight--chicken fajitas

Tuesday--Grilled chicken with pesto, rice and broccoli

    Wednesday--Spaghetti and meatballs

Thursday--Pork chops with honey mustard sauce, not sure what starch/veggie sides to go with.

Friday--DH's parent's are visiting for the weekend, so dinner out with them.

Saturday--my 30th birthday party at a restaurant that I haven't been told the location of yet.

  • This week is cray so here's what I sorta planned out so far:

    tonight - ravioli's

tomorrow - cabbage and noodles (DH makes it and he's d*mn good at it)

wednesday - leftover cabbage and noodles

thursday - chicken rollups with feta/spinach

friday - probably takeout or out

  • Sunday: Dh went to my uncles down the shore to help him clean, so we just had pizza

Monday: left over steaks from Butcher & Singer, with stuffed hash browns

    Tuesday: spaghetti and sausage

Wednesday: either chicken or pork chops

Thursday: beef cakes (which is hamburgers in beef gravy, but I actually use golden mushroom soup and doctor it up)  DH's gmom made them all the time, and their not bad.

Friday, Saturday, my cousin is coming in from FL for a shower, so we're getting together one of the nights

  • We had Declan's Christening yesterday, so we ate that food last night, and will finish off leftovers tonight.  My dad made chili, chicken a la king, and sausage soup...plus we have a couple of salad type things to throw in with it and some bread.

Tomorrow I'm making homemade mac & cheese.

That's all I've figured out so far.  We have a ton of food, just have to make a plan for Wed/Thurs.

Friday we are out at a wedding.

Saturday I am going to see my brother in the drama production at his college, so I may eat with my mom beforehand, or at the very least it will be a quick dinner for DH and me before I leave.

    I suck this week.
