Sun- we were lazy fat assses and had Jim's Steaks, disappointed though and they were not worth the extra calorie intake
Mon- chicken cutlet, mash and steamed asparagus
Tues- I bought a pork roast for the first time since they didn't have a tenderloin, not sure what I am doing with it yet, along with sweet potato and spinach on side
Wed- family polyanna dinner at my aunt's
Thurs-???
Fri- out for my birthday with the girls
Sat- party

Su- grilled pork chops w apple butter bbq sauce, sweet potatoes, asparagus
M- Roast beef, potatoes, broccoli
T- chicken stuffed with spinach, mozz and sundried tomatoes. I need a side for tonight ladies, thoughts?
W- fancy dinner in NYC
Th- leftover roast beef in a sandwich most likely. Maybe sweet potato fries and some sort of veggie
F- Taco night
Sa- Not really sure. I know I planned it but I don't have the list at the office. Likely a pork chop dinner because that is all of the frozen meat we have. Oh, or maybe grapefruit bbq shrimp.
I'm such a scatterbrain this week! I played hookie yesterday so I did use that as an excuse to make some broccoli mac and cheese bites for the kid. Used whole wheat pasta and made them in a mini muffin tin. They actually turned out kind of perfect.
Monday: Chicken piccata with lemon pepper orzo
Tuesday: sign language class so probably leftovers
Wednesday: something easy. Maybe grilled cheese and soup or eggs.
Thursday: whatever I didn't have the night before
Friday: homemade pizza
Mon - rotini with shrimp and sundried tomato pesto...one of our favorite easy meals
Tues - cilantro lime chicken with some kind of steam-in-the-bag rice from target with the same basic flavors
At some point I will need to grocery shop since I still have not replenished what we lost in the power outage. We only have a few things that we saved and brought to my BIL's house to store in his freezer. Maybe I will go tonight so we have food for tomorrow and the rest of the week.
Tracy, that Cilantro lime chicken sounds good, do you have a recipe?
Sunday: baby shower
Monday: I was off, didn't do a thing, when dh came home, we went to Maggiano's YUM
Tuesday: either perogies with fried onions, or kielbasa and kraut
Wednesday, Thursday, Friday: ???
nov- it was very blah...I don't know what I did wrong. Olive oil, garlic, lime zest and juice, salt, pepper, chopped cilantro..,marinate overnight. I baked it this time but last time I put it on the grill.
Jen - would you have the recipe for this? It sounds yummy, and tonight feels like soup.
