breakfast casserole recipes
We are hosting breakfast for Christmas morning so I want to make things ahead of time that can just be put in the oven. There are a million on pinterest, anyone have a family or tried and true recipe? I am looking for one sweet- french toast type?- and another savory- eggs/peppers/potatoes/cheese type of thing?
Thanks!

Re: breakfast casserole recipes
I made this last winter and absolutely loved it. Even better, it's in the crock pot so you can do it the night before if you want.

I've done both of these and they are always big hits - even though pretty simple.

I do an egg casserole that I just kinda made up: saute a half package of bulk pork sausage (I do Bob Evans Italian style), strain and cool. In the same pan add some diced onions and saute until soft and let cool. Spray 9x11 baking dish with Pam. Add sausage and onions to the bottom in an even layer. Then add a big handful of chopped fresh baby spinach, maybe a cup or twp of thawed hash browns and 1 dozen scrambled eggs. Top with some shredded cheddar. Bake at 350 for 45 mins or until the middle is set.
My one friend does an awesome crock pot one every Thanksgiving am.
I think it's really close to this one

I made this breakfast enchilada casserole a few weeks for a family brunch and it was a huge hit!

The leftovers (although there weren't many) were good reheated the next day too.
