what's cooking?

I've been trying to be better about meal planning because I've fallen off the wagon the last few weeks.

Monday: crock pot bbq chicken, smoked gouda mashed potatoes, peas, carrots

Tuesday: leftovers

Wednesday: Ham slice, sides tbd

Thursday: raviolis

Friday: the kiddo and I are on our own because DH has his work Christmas party.  I'm thinking about springing for Panera for us.

Re: what's cooking?

  • No menu planned (no surprise there) but I made this whole "roasted" chicken in the crock pot for dinner yesterday and it was AMAZING! The meat was so juicy and tender that it just fell off the bone. It has a good spice to it so if you don't like spicy, cut back on the cayenne pepper. DH and I like spicy so it was perfect for us. I know you guys like a good crock pot recipe and this one is a keeper.

  • Thanks for the recipe, NQ!  I will be doing that next week at some point.  I just emailed DH today to ask him to brainstorm some things we can do in the crock pot now that I'm back to work.

    Tonight - chicken legs with a hickory bbq buffalo rub, green bean salad, and annie's mac and cheese

    Tues - pork roast in the crock pot with potatoes, carrots, mushrooms and onions...and Ken's vidalia onion dressing.  My mom makes this often with either pork or chicken thighs and it's so delicious

     Weds - butternut squash ravioli with goat cheese cream sauce

    Thurs - leftover pork

    Friday - work event...dinner there.

    Saturday - family party...word on the street there will be lobster mac n cheese. sign me up!

    Sunday - girls' cookie baking night...probably pizza

  • I stink at meal planning, and lterally this is what we have planned. I am embararssed, and realize our need to get on this in the New Year. M- I have a dr's appt- we will grab something on our travels T-I have another dr's appt- again, we will grab something on our travels W- Usually our week night date night. So, again we will eat out. Th- Chicken of some sort.....woo hoo dinner at home :) F- Malvern Christmas- We will get Anthony's while we wander around Sa- He is going to a b-ball game. I will eat out. Su- in-law's
  • I am feeling like crap and did my meal planning in a hurry when I was on a lunch break stop at Acme. it's boring but it is food Sun- ate at a party Mon- grilled bone in strip steaks, zucchini, rice Tues- linguini and clams, salad Wed- I'm out with T1so DH will probably order chinese Thur- tacos Fri- out Sat- out

  • Sunday- The Christmas get together with co-workers from my summer job actually turned out to be a surprise baby shower for me. I was shocked to say the least. When I came home, DH was hungry. so he made pasta with Giada's creamy tomato sauce from Target (I am in love with this stuff- what kind of Italian am I!) and I had a little, because pregnant Italian people never turn down pasta. Monday- Pot Roast in the Crockpot with veggies. I left it home alone and DH gets home before me, so he'll probably add pepper to it. Tuesday- Leftover pasta Wednesday- Parmesan Chicken, Couscous and a veggie Thursday- My niece is going to be at my parents' house, so we'll probably eat there. Friday- Beef enchilladas and rice Saturday- Going out for a birthday dinner with a friend

    Sounds like a great weekday meal. Quick question - how was the skin?? Was it slimy at all from cooking in its own juices & fat? I have been HORRIBLE these past few weeks. Hoping to be a bit better this week :) Sunday - Braciole & Rigatoni, with homemade Parmesan pull apart bread. We had people over for dinner, but I doubled the recipe and there is plenty of gravy left. Monday - P&S Ravioli and Ceasar Salads Tuesday - P&S Tortellini and Caesar Salads (I'll freeze any leftover gravy at this point to use next time I make pizza) Wednesday - Fried Chicken cutlets with mashed potatoes and Mccormick gravy Thursday - Turkey Sloppy Joes Friday - Sushi Takeout Saturday - Baby shower in the afternoon so will probably just go out for dinner somewhere local

    Sounds like a great weekday meal. Quick question - how was the skin?? Was it slimy at all from cooking in its own juices & fat?

    The skin didn't bother me at all. The breast meat wasn't under any juices so the skin there was similar to a roasted chicken from a grocery story that's been sitting in a plastic container. The leg meat ends up being submerged so the meat there was so juicy that I don't even recall having an opinion on what the skin was like. You're not going to get a crispy skin from this recipe but the meat is so good it didn't really matter to me. I couldn't lift the chicken out of the crock pot without the wings and legs falling off. It was super tender.

  • I usually just toss the skin anyway. This sounds like it would be pretty amazing with some mash potatoes.
