Tell me about your lunch.

I bring mine almost every day, and am looking for some healthy cold sandwich ideas. I've just realized that my peanut butter is adding an extra 200 calories that I really don't want, but I need something with protein that keeps me full til dinner time. I don't like to eat deli meat much, just to add to the fun. What do you put on your sandwiches?

  • Sometimes I like to use chive and onion cream cheese and load down a bunch of veggies (tomato, cucumber, red onion, spinach) on a wrap.  You can add grilled chicken, too.  Maybe make a tzatziki sauce and use pita bread?

  • How about tuna or chicken salad?
  • Now, see? Why didn't I think of those? And with the chicken salad idea, I could double up on protein with chicken and egg. Is there anything better to make it stick together than low-fat mayo? I'll bet I could make that veggie thing with avocado, too. Yum yum yum.
  • I've made chicken salad with fat free plain greek yogurt before and it turned out nicely. You could also do smoked salmon and cream cheese on a wrap. I usually make a big pot of soup and take that for lunches through the week

    I've made it a few times to eat with roasted broccoli/cauliflower, and I actually think I like it more than regular ranch.

  • Today I took a HUGE container of romaine lettuce for lunch. I added a few capers and about 3 oz of salmon that we cooked for dinner last night. I made dressing this morning in less than 2 minutes (just a couple of spoon fulls of mustard, a spoonful of maple syrup, one of olive oil, a generous pour of balsalmic vinegar, and a pinch of salt.) It was so, so good! DH took the same thing and said, "We can eat anything on salad, right? That was incredible!" We were stuffed by the end because of the oil in the salmon. DH and I are both big eaters, and the key for us to feeling full is having at least some fat in our food. BoyMom's ideas abour cream cheese would do the trick, for example.
