Christmas/Holiday Cookies
Ok guys, we're getting down to the nitty gritty and by that, I mean baking time. I need to know, what cookies do you bake? Recipes if you're feeling kind.
I usually stick to solely chocolate chip cookies, the Nestle recipe. But I think I might branch out and make pb cookies and some kiss cookies. But I want to make something minty too.

My bffs just came over last night for our annual cookie bake.
I made oatmeal cinnamon chip cookies with craisins - recipe. I make these every year and they might be my favorite cookie of all time.
My friend made shortbread and they were super easy and delish - 4 sticks butter, 1 cup sugar, 5 cups flour...blend together (add flour 1 cup at a time) and let the dough chill for a bit. Then roll it out and use the cookie cutters of your choice. Sprinkle the top with cinnamon sugar mixture. Bake at 325 for 20 mins or until the bottoms start to become golden brown.
I just made a new recipe today that ended up tasting like thin mints! I'm sure you can find the recipe online if you google but basically you mix a box of devils food cake mix with an egg and 1/3c oil. Roll the dough into balls, bake 8 minutes @ 350, put half an Andes mint on top and put it back in the oven to melt a little. I haven't figured out how to make them look beautiful yet, but they're tasty!
My other usuals include jam thumbprints and a cranberry orange pinwheel cookie.
Ugh, this is reminding me I have to start baking. Here's my list and this year I'm going to strive to make 5-6 of these.

I'm hoping to get to do Monster Cookies this weekend. Here's the recipe I got from a friend for them last year. Sorry it's coming up huge- I'm copying and pasting from my email and for some reason can't adjust font size properly:
Monster Cookies
2 C brown sugar
2 C white sugar
1 C butter
3 C peanut Butter
Cream together well and then add 6 eggs
1/2 Tbsp Vanilla
1/2 Tbsp pancake syrup
4 Tsp baking soda mixed into 9 C rolled oats
350 g bag of chocolate chips
200 g bag of smarties (or m&m's)
Mix together well. Put on ungreased cookie sheet by large tablespoon fulls. Bake at 350 for 10-12 minutes.
I have a baking filled weekend ahead of me, now that both of my grandmoms have passed and I am the only one in the family that loves to bake, I take responsibility to carry on traditions. I always do a family recipe from each side, some staple ones and then one new kind every year. cookies this year will be:

Snickerdoodles are my favorite. I normally use the Better Homes and Gardens cookbook recipe (the red plaid one). But if this is your favorite...I may have to try it instead.
I'm always looking for some good and tried and true recipes (that aren't too hard!). What is your favorite of the family recipes? The iced ricotta cookies stick out to me.
the ricotta is the favorite in our house, probably will make three batches, one for us, one for work and one for trays.They are easy to make but kind of high maintenance lol. I feel like they dont stay fresh very long and dont hold up well in a tin, better in a shirt box with wax paper, so make them right before you are ready to give out, I will save these for Sunday night.
1st Beat
1 lb of soft butter
2 cups of sugar
2nd Beat
15 oz ricotta cheese (whole milk no low fat crap)
3 eggs
3rd Beat
4 cups of flour
2 teaspoons of baking powder
2 teaspoons of vanilla
Plop with a teaspoon on a cookie sheet
Bake at 350 for 10-12 minutes
For the icing, I don't have an exact recipe, sorry, I just judge on my own. I can measure it out when I make it and text you though if you don't trust yourself. It is just a mixture of 10xsugar, milk and a drop of vanilla or lemon juice whichever flavor you prefer or you can skip both. Mix the sugar in a bowl and keep adding a little milk until it is a thick consistancy, thick enough to coat the spoon but not too thin so that it runs off the cookie.
I lay wax paper out over my entire table then just knife a blob on top of each cookie. Make sure cookies are completely cool before icing and completely dry before storing. i usually let them sit out over night or a good few hours before i put in the shirt box.
