Re: Menu Monday
I made a steamed artichoke recipe from my mom tonight for dinner. It was really yummy and easy!
It's just whole artichokes in a shallow mix of water and some olive oil. I cut the tops and bottoms and washed them. Then put them in the deep pasta type pan with bread crumbs on top. Covered them and let the water boil on high for about 20 min or so. The longer the better because they get super soft. You can tell when they're done when they've kinda bloomed in the pan. Yum!
For Christmas I am making garlic mashed potatoes, deviled eggs, and I'm going to attempt to make H's grandmother's fudge. It was SO good on Thanksgiving that I just have to try it myself.
I think what she does is melt chocolate chips, then melt peanut butter and stir it together. She then adds marshmellows and it becomes delicious! (I think she uses crunchy peanut butter but I don't like that so I might add almonds instead for the crunch)
