what to do with leftover chicken
I made NQ's crockpot chicken on Tuesday night and I have about half of it leftover for tonight - probably 1-1.5 pounds of white meat. I should have cooked it upside down - the breast meat was a little dry so I don't want to eat it by itself again.
What should I make with it? no quesadillas and DH does not like chicken soup (the horror). I don't have time to run to the store tonight
I also have some leftover mashed potatoes...which by the way were amazing. I added some Helluva good french onion dip to them instead of butter and milk. You need to try this. Definitely not the healthiest move, but damnnn.

Chicken pot pie or some sort of casserole. I make a chicken casserole with noodles, cream of mushroom soup, cheese, veggies etc... It's tasty and a WW reciper
I wonder if you could make a shepards pie with chicken and use your potatoes. Of course it wouldn't be shepards pie then, but thinking on those lines.
My husband doesn't like chicken noodle soup either. He is a very picky eater, I blame his mother for catering to this
I made chicken salad with my leftover chicken and had that for lunch for about three days. I don't use a recipe for my chicken salad, I just toss in whatever I have: mayo/greek yogurt, apple, grapes, nuts, onion, celery, craisins...curry is really good in fruity chicken salad.
Chicken a la King is another good option. DH makes this from time to time. It's not the prettiest meal but it tastes pretty good.

We add a can of Cream of Celery and half the sour cream. Its comfort food good.
my mom made this recipe so much as a kid that i can't stand it now! haha
DH thought it was some secret family recipe until this week. I asked him to google it and pull the Paula Dean version for me. His reaction was PRICELESS!
My little nuggets
BBQ sauce, leftover chicken, smoked gouda, bacon on a pizza. Heaven.
One could also add onions, but I happen to hate those
