I bought some Quinoa, any recipe tips or ideas? I have never worked with it before but I'm amazed at how much protein it has. I'm trying a fruit quinoa now where its cooked with half water and half fruit juice, add diced apples and cinnamon with some agave.

It's really easy. H doesn't really like the texture, so I make it for myself!

And I've made it to replace rice with orange chicken. Jeff is eh about it, but I love it.
Yumm, all these recipes look so delicious, I saved all of them. I'm making beef stew this week, maybe I can get the quinoa for the side to mix in with the sauce.
I was kind of afraid to cook with it too but it pretty much cooks just like rice. I wonder if I can stick it in the rice cooker lol
Will you share the recipe for the fruit version?
We cook with it often, and I imagine I'll be eating a ton of it in the next three weeks. I'm doing a Daniel fast with my church and can't eat meat, so this is a great way to get protein.
I know one of the ladies I go to church with makes it with roasted vegetables, but she hasn't sent me that recipe yet.

I kind of made the recipe as I went along but it went something like this:
1 cup uncooked quinoa
1 cup water
3/4 cup fruit juice (could be apple but I used strawberry kiwi since thats what I had)
2 apples (any kind) chopped
1 tsp cinnamon (or more/less to taste)
Directions:
1. Combine quinoa, water and fruit juice and bring to boil. Lower the heat to low/medium and cook until all the water is absorbed (pretty much like rice)
2. Place apples in a microwave safe dish, add 1 tbsp of water and cover with plastic wrap. Microwave for 2 minutes and stir when done. Put back in for 2 minutes.
3. When quinoa is done, add the apples and season to taste with cinnamon. Tadaaa!
