What's Cooking?

Since I'm guessing everyone is back to normal/routine, what's on tap for the week?

Monday: pulled bbq chicken, mashed potatoes and a veg

Tuesday: crock pot chicken teriyaki with "quinoa fried rice"

Wednesday: chicken with pasta in one of those Philly cream cheese cooking creams

Thursday: leftovers

Friday: ? the hubs is playing poker so the kid and I are flying solo for dinner

  • I came up with a boring menu and am back to routine for half the week then it is off to Disney, yay! I am including our dining reservations here for those that care and so I wont be too much of an AW anywhere else

    Sun- shrimp scampi and spinach salad

    Mon- grilled cheese burgers, homemade french fries, salad

    Tues- london broil, roasted broccoli crowns, rice of sorts

    Wed- grilled cheese and soup or whatever since we will be dropping off kids to the grammies and running around for last minute stuff

    Thurs- pasta dinner at Via Napoli in Epcot :)

    Fri- dinner with our group at Be Our Guest in Magic Kingdom

    Sat- La Hacienda in Epcot for lunch then drinking around the world with our crew

    Sun- breakfast at 1900 Park Fare and late dinner at Jiko

    Mon- dinner at Todd English's Bluezoo

  • Mon- I am on my own.  So, I will have a turkey and cheese wrap with a salad.

    Tues- Steak, Mashed Potatoes, Green Beans, Salad, and Biscuits.

    Wed- I am on my own again.  Tuna Wrap with a salad.

    Thurs- Pasta and Meatballs with a salad.

    Fri- We will eat out or have take out.

    Sat-We will eat out.

    Sun- We will eat at my parent's house.

  • Mon -Linguine w/ shrimp and garlic scape pesto, roasted veggies

    Tues - Frittata w/ spinach, red pepper, potatoes and feta

    Wed - Homemade pizzas with kale pesto, fresh mozz and tomatoes. Trying it out on naan bread.  Also, a spinach salad.

    Thur - Crockpot chicken tacos, brown rice, 

    Fri - Chicken and barley stew with dill and lemon

    Sat - Lemony lentil soup, spinach salad

    I'm also trying out a new winter salad recipe I found for weekday lunches It includes: kale, shaved brussel sprouts, shredded carrots, red onion, dried cherries, almond slivers and parsley tossed in a olive oil/lemon juice/garlic/honey dressing.

  • I dont have much of a menu planned out, but I do have some chicken to thaw, and then I want to try the chicken wanton tacos I pinned last night

  • I need to get on this. Demo for our kitchen is starting in probably less than a week so we'll be without all appliances. I have grand ideas to make some frozen things this week but we'll see.

    Tonight is baked chicken fajitas. The dude is now obsessed with Pinterest and he found this recipe so we'll see. Thats as far as we've gotten!

  • I am actually working day shift a lot this week so I will be cooking for 4 days instead of the usual two which makes me happy Smile I miss cooking!

    Sunday-Cheesesteaks and fries

    Monday-Parmesan tilapia with a salad and roasted potatoes

    Tuesday-DH on his own, salad and Lean Cuisine for me at work

    Wednesday-Crockpot taco chicken chili

    Thursday-Sausage and peppers on the grill with veggies

    Friday-?

  • Monday - rotisserie chicken with some sugar snap peas and garlic quinoa and brown rice (one of those 90 second micro thingys).  

    Tuesday - butternut squash and goat cheese soup and a salad...with some naan bread if I can get to the store.

    Weds - lasagna with italian chicken sausage instead of ground beef

    Thurs - my bday!  DH is picking up pre-made crab cakes for us to cook up from our local fish market.  Probably asparagus and some roasted potatoes to go with.  He is a terrible cook but offered to make me dinner...so I figured this would give us the best results.

    Fri - pizza night
