we are heading to disney at the end of the month, trying to start thinking about what I'm packing.

Earlier last week, I froze my butt off and actually turned on the heat for the first time. This week it's 80. I'd wait until the week before to start packing. If you want to arrange some stuff now, I'd lay out some clothes based on a colder forecast and clothes for warmer temps.
I'd say definitely jeans and sweatshirts or jackets for the evening and night.
