What's for Dinner?

It's almost lunch time, so obviously I'm thinking about food!

What's on the menu for tonight?

Re: What's for Dinner?

  • We're having baked, salt-less fries (aka My Favorite Fries Ever!):  http://www.skinnytaste.com/2011/02/baked-seasoned-fries-with-skinny-garlic.html

And baked chicken drumsticks marinated in a balsamic vinigarette.

  • I took out some chicken this morning knowing I could find something to do with it. And I think I decided on Chicken and dumplings. It's been forever since I made it for H and it's one of his faves.
  • I have chicken in the fridge that I have to cook, no idea what I'm going to do with it yet.  I'll have to look at the weight watchers website to get some ideas.

  • I'm trying to decide between Chicken something... or Salmon. I'll take something out when I go home for lunch. We'll have egg noodles with it.

  • Tonight is probably leftover spaghetti, which was probably the best spaghetti I've made yet! Or a sandwich. Me and my best friend are doing zumba at 7 tonight so I'll be home late.. Then its dinner and bed. So gotta do something quick and easy.

One of my favorite WW chicken recipe is the Chicken Milanese. It is chicken breasts rolled in a bread crumb/parm. cheese mixture and cooked in a tablespoon of olive oil. I LOVE it. It is really good with a salad.

  • I think tonight will be leftovers and salads.  H and I can't seem to make normal amounts of food, no matter what we do, so he used our massive leftover mashed potatoes to make a shephard's pie the other night, and I made a massive batch of chili last night... So I will probably make some salads and we'll eat leftovers :)

Tomorrow, though, I think H will make beer can chicken on the grill.  Yum!

(it will also give us a ton of leftovers, but we'll probably use them to make sandwiches or burritos, or something. or everything

Last night I made the WW baked chicken recipe (recipe), it was fast and easy.

SkinnyTaste also has a lot of good chicken recipes. My favorite are the rollatini/stuffed chicken. I usually combine a few of her recipes based on what I have on hand and they always turn out well and are very filling!

This actually sounds really good I may have to make this soon!!

  • I threw some beef stew into the crock pot this morning so I'd not have to worry too much about it tonight. H is sick, so I've been trying to keep foods simple. I love those McCormick seasoning packs. They make putting together a meal really easy. Tomorrow is steak night and Saturday I am making a Holiday dinner. We're having holiday food withdraws and I have a leftover frozen turkey breast in the freezer and I'm going to make stuffing and cranberry sauce and veggies and potatoes and all the fixings...just for fun. :) Sunday is Stir Fry (one of my serious favorites!)
  • Mona- those fries look amazing.  I think I'll make those next time I cook (probably Sunday!).  Tonight, we are having very basic speghetti with pesto sauce (out of a can) with shrimp in it.  Trying to use up pantry/freezer items.  Tomorrow I'm meeting girlfriends for dinner and I'm sure Saturday we'll end up out to eat.
