We have our staff appreciation dinner tonight and I think chicken parm is on the menu.
Tonight is probably leftover spaghetti, which was probably the best spaghetti I've made yet! Or a sandwich. Me and my best friend are doing zumba at 7 tonight so I'll be home late.. Then its dinner and bed. So gotta do something quick and easy.

One of my favorite WW chicken recipe is the Chicken Milanese. It is chicken breasts rolled in a bread crumb/parm. cheese mixture and cooked in a tablespoon of olive oil. I LOVE it. It is really good with a salad.
I think tonight will be leftovers and salads. H and I can't seem to make normal amounts of food, no matter what we do, so he used our massive leftover mashed potatoes to make a shephard's pie the other night, and I made a massive batch of chili last night... So I will probably make some salads and we'll eat leftovers
Tomorrow, though, I think H will make beer can chicken on the grill. Yum!

Last night I made the WW baked chicken recipe (recipe), it was fast and easy.
SkinnyTaste also has a lot of good chicken recipes. My favorite are the rollatini/stuffed chicken. I usually combine a few of her recipes based on what I have on hand and they always turn out well and are very filling!

This actually sounds really good I may have to make this soon!!
