I don't mean today. I am asking in the general sense. I am trying to eat healthier and I'm good with breakfast and dinner, but I struggle with lunch. I try to stay away from frozen diet entrees because they are just so processed. I usually have a sandwich but I need to get away from bread. I will sometimes make a big batch of soup but I don't always have the fridge space for it.
Just curious what you all eat for lunch day to day?

Since I'm out of the house until 10:30 3 night per week, I do all my cooking on Sunday. I love salads, but only when someone else makes them, and it's expensive to buy them from my cafeteria every day (plus, they kind of suck).
I use a lot of Skinnytaste recipes and Allrecipes and I bring some of whatever I made to work for lunch.
This week I made Crock Pot Picadillo and Turkey Stuffed Peppers (I used green peppers instead of red). Last week I made Chili and a Chicken and Broccoli Noodle Casserole.
Lunch is provided at my school and there's lot to pick from...if you get there on time. I pump at the beginning of the period so I get whatever is left...blah.
Almost every day I have a salad and soup. Sometimes a grilled chicken wrap on whole wheat tortilla, with spinach, tomato, and feta.
Today, I will probably have half of a cheesesteak since that is the entree of the day. Not healthy but cheesesteaks are my fave and they only serve them once a month.
I work about 5 minutes from the Bala Cynwyd Acme. They have a pretty decent salad bar, and I'm pretty good at keeping it around $4. They also have sushi rolls, 12 peices starting at $6. Another cheap eat-out option is Wendy's - I order a small chili and a plain baked potato for less than $5. I just dump the chili on the potato.
I'll make a pot of soup/chili/stew on Sunday, package individual servings in tupperware and freeze them. I grab one in the morning, and leave it out until lunch so it thaws.
Not that wraps are much better than bread, but the smaller whole wheat ones are only 120 calories or so. I'll eat them with lunch meat or italian tuna. Last week, I roasted eggplant, zucchini, onions and tomatoes and ate it at room temperature in a wrap with some fresh mozzarella and a little balsamic.
Sometimes it's leftovers and sometimes I'll make something specific to take for lunch.
Yesterday I made lemony lentil soup and chili that I'll alternate with a side spinach salad.
I'll usually make different salads or sides just to keep it interesting. Here are a few things I make:

Lentil and Cous Cous Salad with Arugula
Mediterranean Crunch Salad
Tuscan Pasta Salad with Grilled Veggies

I mainly work from home now, so my lunches are kind of all over the place and often eggs. But when I was trying to make really healthy lunches, I would actually just pack a LOT of snacks which I'd eat every 2-3 hours throughout the day. If you like lunchmeat, can you eat it without the bread? That's what I used to do. I'd just throw sliced turkey and cheese in a bag and eat as a rollup (without any condiments). Then at least you get the protein without the bread.
The other 'lunch items' I would pack to get me through the day:
Hummus with cucumbers, peppers, and carrots for dipping
string cheese
almonds
blueberries/raspberries (a very low glycemic fruit)
yogurt/granola
laughing cow cheese/crackers
As long as I ate every 2ish hours, I would stay full throughout the day.
I'm making this for dinner tonight (without the chicken - we are having drumsticks instead), but you could easily make a batch and portion it out for lunches.

Jewels I usually try eating every two hours but my lunch is a little bit of a larger meal. I'll try scaling back because that looks like less pressure to have something that typically says "lunch" like a sandwich.
Today I'm having leftover gnocchi from Sapori in Collingswood, but that is certainly not the norm - Although I am super excited for lunch today.
Recently I have been loving the new Campbell's 100% natural soups. I wish I was better at packing better lunches for me, but by the time I get done making DD's breakfast and lunch to go, I am sick of packing stuff.
Yeah, I know what you're talking about. It's hard to feel like you had 'lunch' without having something of substance. I would eat like lunchmeat/cheese, hummus and veggies (a LOT of them), and something sweet (like a sugar free pudding) and I'd feel like it was a meal. I'd be hungry in 2 hours, but then I'd eat the cheese & nuts. And then go back 2 hours later for 2 more snacks. This is when I was doing south beach, FTR. And will probably have to do again if I do end up getting GD ::fingers in ears, la la la::
I know what you mean! I eat a lot of soups, salads, and wraps. I try not to eat out at lunch, but do it once a week. Normally, I am super hungry by 2:00 or 3:00, and that may explain my crazy weight gain this year.....ugh!
Today, I had a salad from Seasons pizza. They do two salads for $12. Last night, I ate one for dinner and the other at lunch today. I am still full! It was great!
