what's cooking this week?

Since most of my students are out sick, we are having a "catch up" day in my classes.  I, however, would like a break from this neuroscience powerpoint I've been working on.

What's everyone having for dinner this week?

Sunday - leftover turkey sausage lasagna

Mon - garlic herb marinated drumsticks and cheesy broccoli quinoa casserole

Tues - spinach, garlic and fontina chicken sausages and leftover quinoa casserole

Weds - girls' night apps and drinks!!!!  

Thurs - penne with shrimp and sundried tomato pesto

Fri - pizza, either at home or at my nephew's bday party (if DD isn't sick and grumpy)

  • good question! came back from vacay to an empty fridge, I will be shopping at lunch for tonight and tomorrow's dinners. I am thinking a whole roasted chicken, baked yams, and spinach for tomorrow and some maybe salmon tonight unless someone sparks an idea here.

    Friday is sushi night and Saturday maybe out somewhere fun with the kids for dinner to make up for the guilt I feel for leaving them the past five days.

  • We suck at eating at home!  As I write this out, I see how horrible it is :)   But, my kitchen is always clean.

    M-Shepards pie and salad

    T- We had our mid week date night, and went out

    W- Whinos night for me at Capital Grill/He is going to the Nova game with his brother

    Th-He is going to an event in the city for work/I am getting my hair done- Eat on our own

    F-Probably Out

    Sa-Out w/friends

    Su- Parent's house

  • Sun- made a massive ham, cheese potatoes, and green beans.

    Mon- leftover turkey chili from Sat and cornbread

    Tues- ham and bean soup

    Weds- roasted chicken w either rice/broccoli or broccoli/stovetop

    Thurs- it was supposed to be mac and cheese w ham and peas mixed in but we have a funeral to go to in Philly so who the hell knows how I am going to be by the time I get home with the weather.

    I don't remember the rest of the meals but we are running thin on some options because it is normally grocery shopping weekend but we will postpone based on inauguration craziness.

  • Sun - baked salmon, kale and quinoa pilaf, shredded carrot salad

    Mon - out to eat at Elevation Burger

    Tue  chicken and barley stew with lemon and dill, roasted broccoli

    Wed - baked shrimp, tomatoes and feta over brown rice, carrot salad

    Thur - potato, leek and cheese bake, eggs

    Fri - Lemon and tarragon chicken, herbed cous cous, roasted cauliflower

  • Sun: went to hibachi dinner with friends- our last get together before we all start hitting 30 this year.

    Mon: chili

    Tue: grilled chicken marinated in strawberry vinagrette (not a good idea, in case you were wondering) with baked potatoes and corn

    Wed: hot dog & baked bean casserole (healthy, huh?)

    Thu & Fri: not sure- eating at home though. 

    Sat: DH is away Sat-Mon for work, and I have friends coming down for lunch Sat...kinda hoping we have leftovers enough for dinner; otherwise, probably make something real easy like mac & cheese for me and the kiddo.

    Sun: hoping to eat at my parents'.

  • I am a sad sack because this is my favorite post of the week.  I love to cook and wish I had more time to do so during the week.

    Monday: chicken piccata with basil couscous and buttered peas

    Tuesday: a quinoa/chicken/veggie mix

    Wednesday: This was a crap night.  I had a hard boiled egg sandwich.

    Thursday: beef stew in the crock pot

    Friday: tbd

    Saturday: I might like to go out since we haven't been to a restaurant in forever!  I owe DH a dinner at Georgine's in Bristol.  Maybe we'll head there.

    Sunday: I made some BBQ sauce from scratch last week.  I might make pulled BBQ chicken in the crock pot and maybe bake up some rolls.

  • Guys i straight up made my first slow cooker meal. it is slow cooking as we speak. for a very un domesticated lady this is amazing.
